How to Make Takeaway Egg Fried Rice

Egg fried rice is a beloved dish enjoyed by many, often ordered as a takeaway due to its delicious taste and satisfying texture. While it might seem like a complex dish to prepare at home, with the right steps and ingredients, you can recreate that takeaway flavor right in your kitchen. Here’s a comprehensive guide to making takeaway-style egg fried rice.

Ingredients

Before you start cooking, ensure you have all the necessary ingredients. Here’s a list of what you’ll need:

Rice

  • 350g of pre-cooked long-grain rice (preferably refrigerated for better texture)

Eggs

  • 2-3 large eggs

Vegetables

  • 2 tablespoons of shredded carrots
  • 1/4 cup of frozen peas, thawed
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • Oil: 4 tablespoons of peanut oil or vegetable oil

Sauces

  • 4 tablespoons of oyster sauce
  • 2 tablespoons of soy sauce
  • Seasoning: Salt and white pepper to taste
  • Optional Ingredients (for added flavor and texture):
  • Diced chicken, shrimp, or ham
  • Chopped green onions for garnish

Preparation

Prepare the Rice

  • Using refrigerated rice is crucial as it helps the grains stay separate, preventing clumping.
  • If you don’t have refrigerated rice, you can cook fresh rice and let it cool completely before using it.

Prep the Vegetables and Proteins

  • Wash and chop the carrots into small pieces.
  • Thaw the peas if using frozen ones.
  • Finely chop the onion and mince the garlic.
  • If adding optional proteins like chicken, shrimp, or ham, ensure they are cooked and diced into small pieces.

Beat the Eggs

Crack the eggs into a bowl and beat them until the yolks and whites are fully combined.

Cooking Steps

Heat the Pan

  • Place a wok or large frying pan over medium-high heat.
  • Add a tablespoon of oil and let it heat up.

Cook the Eggs

  • Pour the beaten eggs into the hot oil.
  • Stir rapidly with a spatula to break up the eggs into small pieces.
  • Cook for about 1 minute until the eggs are fully set but still slightly moist.
  • Remove the eggs from the pan and set them aside in a bowl.

Cook the Rice and Garlic

  • Add another tablespoon of oil to the pan.
  • Add the minced garlic and stir-fry for about 30 seconds until fragrant.
  • Add the rice to the pan, breaking up any clumps with your spatula.
  • Stir-fry the rice for 2-3 minutes until it starts to become heated through and slightly crispy.

Add the Vegetables

  • Add the shredded carrots and thawed peas to the pan.
  • Stir-fry for another 2 minutes until the vegetables are heated through and slightly tender.
  • Combine Eggs and Seasonings
  • Return the cooked eggs to the pan.
  • Pour in the oyster sauce and soy sauce.
  • Season with salt and white pepper to taste.
  • Stir everything together until well combined and heated through.

Add Optional Proteins (if using)

  • If you’re adding diced chicken, shrimp, or ham, fold these into the rice mixture now.
  • Stir-fry for another minute until everything is heated through and well combined.

Garnish and Serve

  • Remove the pan from heat.
  • Garnish with chopped green onions if desired.
  • Serve the egg fried rice immediately in bowls or on plates.

Tips for Perfect Egg Fried Rice

Use Cold Rice: As mentioned, using refrigerated or cold rice is key to achieving the perfect texture. Cold rice grains are less likely to stick together, making for a better stir-fry.

Non-stick Pan: Using a non-stick pan or wok can make a big difference, reducing the chances of the rice sticking to the surface and making it easier to stir-fry.

High Heat: Stir-frying should be done over high heat to ensure the rice gets a nice crispy texture on the outside while staying warm and fluffy inside.

Don’t Overcrowd the Pan: Make sure the pan isn’t too crowded with ingredients. If necessary, cook in batches to ensure everything gets evenly heated and stir-fried.

Season to Taste: Taste the rice as you cook and adjust the seasoning accordingly. Oyster sauce and soy sauce provide a savory flavor, but you might need a bit more salt or pepper to balance it out.

Add-ins: Feel free to customize your egg fried rice with various add-ins such as diced bell peppers, baby corn, or even leftover vegetables from previous meals.

Conclusion

Making takeaway-style egg fried rice at home is not only rewarding but also allows you to control the ingredients and seasoning to your liking. With the right techniques and ingredients, you can recreate that delicious, satisfying dish that you often enjoy as a takeaway. Whether you’re cooking for yourself, family, or friends, this recipe is sure to impress with its flavor and texture. So, next time you’re craving egg fried rice, give this recipe a try and enjoy a homemade version that’s just as good as any takeaway. Happy cooking!
