  • 1/4 cup cornstarch

  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup cold water
  • Vegetable oil for frying

For the Sweet and Sour Sauce:

  • 1/4 cup ketchup
  • 1/4 cup rice vinegar (or white vinegar)
  • 1/4 cup sugar
  • 1/4 cup pineapple juice (optional, but adds extra flavor)
  • 1 tbsp soy sauce
  • 1 tbsp cornstarch mixed with 2 tbsp water (for thickening)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp ground ginger
  • 1 tbsp vegetable oil

For the Vegetables:

  • 1 small onion, sliced
  • 1 bell pepper (red or green), sliced into strips
  • 1/2 cup pineapple chunks (fresh or canned)

Step-by-Step Guide to Making Chinese Sweet and Sour Chicken

Step 1: Prepare the Chicken

Start by preparing the chicken. If you’re using chicken breasts, cut them into bite-sized cubes. If you’re using chicken thighs, trim any excess fat and cut them into similar-sized pieces. The key is to make sure the chicken is evenly cut so that it cooks evenly.

In a medium-sized bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Stir the dry ingredients together until they are well mixed. This mixture will give the chicken a crispy texture when fried.

Next, add the cold water to the dry ingredients and stir to form a batter. The batter should be thick enough to coat the chicken, but not too thick. If it’s too thick, add a little more water until you achieve the right consistency.

Once the batter is ready, dip the chicken pieces into the batter, ensuring they are fully coated.

Step 2: Fry the Chicken

Heat about 1 1/2 inches of vegetable oil in a deep frying pan or wok over medium-high heat. The oil should be hot but not smoking. To check if the oil is hot enough, drop a small amount of batter into the oil. If it sizzles immediately, the oil is ready for frying.

Carefully place the battered chicken pieces into the hot oil, making sure not to overcrowd the pan. Fry the chicken in batches if necessary. Fry the chicken for about 4-5 minutes, or until golden brown and crispy on the outside. Be sure to turn the chicken pieces halfway through to ensure even cooking.

Once the chicken is cooked, remove it from the oil and place it on a paper towel-lined plate to drain excess oil.

Step 3: Make the Sweet and Sour Sauce

While the chicken is frying, you can prepare the sweet and sour sauce. In a small saucepan, heat 1 tablespoon of vegetable oil over medium heat. Add the garlic powder, onion powder, and ground ginger, and cook for about 30 seconds to bring out their aroma.

Next, add the ketchup, rice vinegar, sugar, pineapple juice (if using), and soy sauce to the saucepan. Stir the ingredients together until the sugar dissolves, and bring the mixture to a simmer. Let it simmer for about 2-3 minutes, stirring occasionally.

In a separate small bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Slowly add the cornstarch mixture to the simmering sauce while stirring constantly. The cornstarch will thicken the sauce, giving it a glossy consistency. Continue to cook for another 2-3 minutes, or until the sauce reaches your desired thickness.

Step 4: Cook the Vegetables

While the sauce is simmering, it’s time to cook the vegetables. In a separate frying pan or wok, heat a little bit of vegetable oil over medium heat. Add the sliced onion and bell pepper, and stir-fry for about 2-3 minutes, or until the vegetables are slightly tender but still crisp.

If you’re using pineapple chunks, add them to the pan and stir to combine with the vegetables. Stir-fry for an additional minute or so, just to heat the pineapple through.

Step 5: Combine the Chicken, Sauce, and Vegetables

Once the chicken is fried and the sauce is ready, it’s time to put everything together. Add the fried chicken pieces to the pan with the vegetables, and pour the sweet and sour sauce over the top. Stir everything together, making sure the chicken and vegetables are well-coated with the sauce. Cook for another 1-2 minutes, allowing the chicken to absorb some of the sauce and the flavors to meld together.

Step 6: Serve the Sweet and Sour Chicken

Once everything is combined and heated through, your sweet and sour chicken is ready to serve. Plate the dish by serving the chicken and vegetables over a bed of steamed white rice. The rice will soak up the delicious sauce, making each bite even more flavorful.

For a garnish, you can sprinkle some sesame seeds or chopped green onions over the top for added flavor and presentation.

Tips for Making the Perfect Sweet and Sour Chicken

Use fresh ingredients: Fresh vegetables and pineapple will give your dish the best flavor. While canned pineapple can be used in a pinch, fresh pineapple adds a more vibrant taste to the dish.

Customize the sweetness and tanginess: If you prefer a sweeter sauce, add a little extra sugar. For more tang, increase the amount of vinegar or pineapple juice. Taste the sauce before you add it to the chicken to adjust to your preferences.

Crispiness is key: If you want to keep the chicken crispy, you can serve the sauce separately and pour it over the chicken just before serving. This will help preserve the texture of the chicken.

Add vegetables: You can also add other vegetables like carrots, snow peas, or broccoli to the dish for extra color and nutrients.

Serve with rice: Sweet and sour chicken is traditionally served with steamed white rice, but you can also serve it with fried rice or noodles for a different twist.
