Ginger: Slices and julienne strips

Garlic: Minced

Green onions: Cut into strips

Sauce

  • Soy sauce
  • Oyster sauce
  • Sesame oil
  • Sugar
  • White pepper

  • Cilantro
  • Red chili (optional)

  • Wok with a lid
  • Steaming rack or a heatproof plate
  • Knife and cutting board
  • Small bowl for mixing sauce

Step-by-Step Guide to Steaming Fish in a Wok

Prepare the Fish

Clean the Fish: Rinse the fish under cold water. Remove any scales and gut the fish if not already done.

Score the Fish: Make diagonal cuts on both sides of the fish. This helps the fish cook evenly and allows the flavors to penetrate.

Prepare the Aromatics

Ginger: Slice some ginger and place it inside the fish cavity. Julienne the rest for garnish.

Garlic: Mince the garlic.

Green Onions: Cut into strips and set aside.

Prepare the Sauce

In a small bowl, mix:

  • 3 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 teaspoon of sesame oil
  • 1 teaspoon of sugar
  • A pinch of white pepper

Add Water: Pour about 2 inches of water into the wok.

Place the Steaming Rack: Put the steaming rack or a heatproof plate inside the wok. Ensure the water level is below the rack.
