The number of eggs depends on the amount of rice and personal preference. As a general guideline, for about 2 to 3 cups of cooked rice, 2 to 3 large eggs are usually sufficient. The eggs add richness and a creamy texture to the dish.

Organic or free-range eggs often have a more intense flavor compared to conventional eggs. They can enhance the overall taste of the fried rice.

Beating and Seasoning the Eggs

Beat the eggs in a bowl with a pinch of salt and a dash of black pepper. You can also add a few drops of soy sauce or a small amount of water to make the eggs fluffier. Whisk the eggs until the yolks and whites are well combined. This step ensures that the eggs cook evenly and have a consistent texture when added to the rice.
