How to Make Classic Braised Chicken Wings

Braised chicken wings are a delightful and comforting dish that combines tender meat with a rich, flavorful sauce. Whether you’re cooking for a family dinner or hosting a gathering with friends, braised chicken wings are always a hit. In this article, I’ll guide you through the step-by-step process of making classic braised chicken wings, ensuring that you achieve a dish that’s both delicious and satisfying.

Before we begin, let’s list out the ingredients you’ll need:

  • Chicken wings: 1 kilogram (about 2.2 pounds)
  • Cooking oil: 3 tablespoons
  • Garlic: 5 cloves, sliced
  • Ginger: 1 piece (about 2 inches), sliced
  • Scallions (green onions): 3, chopped
  • Soy sauce: 4 tablespoons
  • Rice wine or dry sherry: 3 tablespoons
  • Sugar: 2 tablespoons
  • Water: Enough to cover the chicken wings
  • Salt: To taste (optional, depending on your taste preference and the soy sauce used)
  • Black pepper: A pinch (optional)
  • Star anise: 1 or 2 (optional, for added flavor)
  • Light soy sauce: 1 tablespoon (optional, for a lighter color and flavor)

Before starting the cooking process, it’s important to prepare all your ingredients and tools. This will ensure a smooth cooking experience and help you maintain focus on each step.

Add the Chicken Wings Back: Return the seared chicken wings to the pot, nestling them into the aromatics.

Add Soy Sauce and Sugar: Pour in the soy sauce and sugar. Stir well to coat the chicken wings evenly with the sauce.

Add Water: Add enough water to cover the chicken wings completely. If you prefer a deeper flavor, you can use chicken broth instead of water.

Season with Salt and Pepper: If you’re using salt, add it now along with a pinch of black pepper. Taste the sauce and adjust the seasoning as needed.
