  2. Heat: Place the saucepan over medium heat. Stir until the sugar dissolves.

  1. Whisk Eggs: In a large mixing bowl, whisk the eggs until they are well beaten.
  2. Add Milk: Add the sweetened condensed milk and evaporated milk to the eggs. Whisk until combined.

3. Combine the Mixtures

Once the caramel has cooled and hardened, you can combine it with the custard.

Pour Custard into Mold:

  1. Pour Custard: Carefully pour the custard mixture over the hardened caramel in the mold. Avoid splashing the caramel.
  2. Prepare for Baking: Preheat your oven to 350°F (175°C).

4. Bake the Flan

Flan is baked using a water bath, which helps it cook evenly.

  2. Check for Doneness: You can check for doneness by inserting a knife into the center. If it comes out clean, the flan is ready.

5. Cool the Flan

After baking, let the flan cool down properly.

Cooling Process:

  1. Remove from Oven: Carefully take the baking dish out of the oven.
  2. Cool in Water Bath: Allow the flan to cool in the water bath for about 30 minutes.
  3. Refrigerate: After it has cooled to room temperature, cover the flan with plastic wrap and refrigerate for at least 4 hours, preferably overnight. This helps it set and enhances the flavors.

6. Serve the Flan

Once the flan has chilled and set, it is ready to serve.

Unmolding:

  1. Run a Knife Around the Edges: Use a knife to gently run around the edges of the flan. This helps release it from the mold.
  2. Invert the Flan: Place a serving plate over the top of the flan mold. Quickly invert it to release the flan onto the plate. The caramel will flow over the top, creating a beautiful sauce.
