How to Make Crispy Fried Chicken?

Crispy fried chicken is a dish loved by many, known for its golden, crunchy exterior and juicy, tender interior. In this article, we’ll guide you through the step-by-step process of making crispy fried chicken at home, ensuring you achieve that perfect, restaurant-quality result.

Ingredients Preparation

Before diving into the cooking process, it’s crucial to gather all the necessary ingredients. Here’s a list of what you’ll need:

For the Chicken:

  • Chicken pieces (legs, wings, or breasts, depending on your preference)
  • Salt, to taste
  • Black pepper, to taste
  • For the Marinade:
  • Ginger, finely chopped
  • Garlic, finely chopped
  • Soy sauce or Chinese rice wine, for flavor
  • White vinegar or lemon juice, for tenderizing
  • Honey or sugar, optional, for added sweetness

For the Breading:

  • All-purpose flour
  • Cornstarch
  • Baking powder
  • Salt
  • Black pepper
  • Paprika or cayenne pepper, for heat
  • Garlic powder and onion powder, for flavor
  • Cold water or milk, for dipping

For Frying:

  • Vegetable oil or peanut oil, for frying

Step-by-Step Guide

Preparation of Chicken Pieces

Start by preparing your chicken pieces. Chicken legs, wings, and breasts are all great options. For uniform cooking, ensure all pieces are roughly the same size. Pat the chicken dry with paper towels to remove any excess moisture. This will help the breading stick better and ensure a crispy exterior.

Season the chicken with salt and black pepper on both sides. This basic seasoning will enhance the natural flavor of the chicken.

Marinating the Chicken

Marinating the chicken helps to infuse it with flavor and tenderize the meat. In a large bowl, combine chopped ginger, garlic, soy sauce, white vinegar or lemon juice, and a touch of honey or sugar if you like a bit of sweetness.

Add the chicken pieces to the marinade, ensuring they are fully submerged. Cover the bowl with plastic wrap or transfer to a zip-top bag and refrigerate for at least 2 hours, preferably overnight. Marinating overnight allows the flavors to fully penetrate the chicken.

Preparing the Breading Mix

While the chicken is marinating, prepare the breading mix. In a large bowl, combine all-purpose flour, cornstarch, baking powder, salt, black pepper, paprika or cayenne pepper for heat, and garlic powder and onion powder for added flavor. Mix well until all the dry ingredients are evenly distributed.

The combination of flour and cornstarch creates a lighter, crispier coating. Baking powder helps the coating to puff up and become even crispier during frying.

Breading the Chicken

When the chicken is ready, remove it from the marinade, letting any excess drip off. Discard the marinade.

Set up a breading station with three shallow dishes: one with the breading mix, one with cold water or milk for dipping, and one for placing the breaded chicken.

Working with one piece of chicken at a time, coat it evenly with the breading mix. Dip the chicken into the cold water or milk, shaking off any excess liquid, and then return it to the breading mix. Press the breading into the chicken to ensure it adheres well. Repeat this process two more times for a thick, even coating. This triple-dipping and breading method is key to achieving a crispy exterior.

Let the breaded chicken pieces rest for about 10 minutes before frying. This allows the breading to set and helps it stay on the chicken during frying.

Preparing for Frying

Heat vegetable oil or peanut oil in a deep fryer or a large, heavy-bottomed pot to 350°F (175°C). Use a deep-frying thermometer to monitor the oil temperature accurately.

It’s important to use an oil with a high smoke point, such as vegetable or peanut oil, to avoid the oil smoking and burning, which can ruin the flavor of the chicken.

Frying the Chicken

Carefully place a few pieces of chicken into the hot oil, making sure not to overcrowd the pot. Overcrowding will lower the oil temperature, preventing the chicken from crisping properly.

Fry the chicken for about 7-10 minutes, depending on the size of the pieces. Use tongs to gently turn the chicken halfway through cooking to ensure even browning.

The chicken is done when it reaches an internal temperature of 165°F (75°C) and the breading is golden brown and crispy. Remove the chicken from the oil with a slotted spoon or tongs and let it drain on a wire rack set over paper towels. This helps remove any excess oil and keeps the chicken crispy.

Optional: Double-Frying for Extra Crispiness

For an even crispier exterior, you can double-fry the chicken. Let the fried chicken rest for about 5-10 minutes to cool slightly. Increase the oil temperature to 375°F (190°C).

Carefully return the chicken to the hot oil for an additional 30 seconds to 1 minute. This second fry will further crisp the exterior and give it a beautiful golden hue. Remove the chicken from the oil and let it drain on a wire rack again.

Serving the Crispy Fried Chicken

Your crispy fried chicken is now ready to serve. You can enjoy it as is, with a side of fries or mashed potatoes, or pair it with a dipping sauce like honey mustard, buffalo sauce, or a simple blend of mayonnaise and hot sauce.

Tips for Perfect Crispy Fried Chicken

Marinate Overnight: Marinating the chicken overnight allows the flavors to fully penetrate the meat, making it more flavorful and tender.

Use Cold Water for Dipping: Dipping the chicken in cold water helps the breading to adhere better and creates a steam pocket that makes the crust lighter and crispier.

Triple-Dip and Bread: The triple-dipping and breading method ensures a thick, even coating that results in a crispy exterior.

Maintain Oil Temperature: Use a deep-frying thermometer to monitor the oil temperature accurately. Maintaining the correct temperature is crucial for achieving a crispy, golden exterior without overcooking the chicken.

Double-Fry for Extra Crispiness: Double-frying the chicken gives it an even crispier exterior and a beautiful golden hue.
