A Complete Guide to Making Chinese Steamed Dumplings

Chinese steamed dumplings

Materials

For the Dumpling Dough:

  • 2 cups all-purpose flour
  • 1 cup warm water
  • A pinch of salt

For the Dumpling Filling:

  • 1 pound ground pork or substitute with chicken, beef, or vegetables for a vegetarian option
  • 1 cup finely chopped cabbage
  • 1/2 cup chopped scallions
  • 1/4 cup minced garlic
  • 1/4 cup soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon grated ginger
  • 1 teaspoon sugar
  • 1/2 teaspoon black pepper
  • Salt to taste

For Dipping Sauce (optional):

  • Soy sauce
  • Rice vinegar
  • Sesame oil
  • Minced garlic
  • Sliced scallions

Instructions

Preparing the Dumpling Dough

    Step 1: Mixing the Dough:

    • In a large mixing bowl, combine the all-purpose flour and salt. Gradually add the warm water while stirring with a wooden spoon or chopsticks. Once the dough starts to come together, knead it with your hands until smooth and elastic. If the dough feels sticky, add a little more flour. If it feels too dry, add a splash of water. Cover the dough with a damp cloth and let it rest for about 30 minutes to allow the gluten to relax.

    Step 2: Shaping the Dough:

    • After the dough has rested, divide it into small pieces, approximately the size of golf balls. Roll each piece into a smooth ball between your palms. Using a rolling pin, flatten each ball into a thin round wrapper, about 3 to 4 inches in diameter. Dust the wrappers with a little flour to prevent sticking.

    Preparing the Dumpling Filling

      Step 1: Mixing the Filling:

      • In a large mixing bowl, combine the ground pork (or your chosen protein), chopped cabbage, chopped scallions, minced garlic, grated ginger, soy sauce, sesame oil, sugar, black pepper, and salt. Mix thoroughly until all the ingredients are well combined. The filling should be moist and cohesive.

      Step 2: Testing the Seasoning:

      • To ensure that the filling is seasoned to your liking, take a small spoonful of the mixture and cook it in a skillet. Taste and adjust the seasonings if needed. Remember that the flavors will mellow slightly after steaming, so the seasoning should be slightly stronger than your desired taste.

      Folding and Assembling the Dumplings

        Step 1: Filling the Wrappers:

        • Place a small spoonful of the filling in the center of each wrapper. Be careful not to overfill, as it may make folding difficult. Leave a small border around the edges for sealing.

        Step 2: Folding Techniques:

        • There are several folding techniques you can choose from, depending on your preference and skill level. Here are two common methods:
        • Basic Pleating Technique: Moisten the edges of the wrapper with water. Fold the wrapper in half to form a semicircle, enclosing the filling. Starting from one end, use your fingers to pleat and seal the edges together, creating a crescent shape. Continue pleating until the dumpling is fully sealed.
        • Purse Fold Technique: Moisten the edges of the wrapper with water. Place the filling in the center of the wrapper. Gather the edges of the wrapper upwards, creating a purse-like shape. Pinch the edges together to seal, ensuring there are no gaps or openings.

        Step 3: Storing the Dumplings:

        • As you assemble the dumplings, place them on a lightly floured tray or baking sheet, making sure they don't touch each other. If you're not planning to cook them immediately, cover the tray with plastic wrap and place it in the freezer. Once the dumplings are frozen, you can transfer them to a freezer bag for long-term storage. Frozen dumplings can be cooked directly from the freezer when needed.

        Steaming the Dumplings

          Step 1: Preparing the Steamer:

          • Fill a large pot or a steamer basket with water, ensuring that the water level is below the steaming rack. Bring the water to a boil.

          Step 2: Steaming the Dumplings:

          • Line the steaming rack or basket with parchment paper or cabbage leaves to prevent sticking. Place the dumplings on the rack, leaving some space between each dumpling to allow for expansion during steaming. Place the steaming rack or basket over the boiling water, cover with a lid, and steam for about 12 to 15 minutes or until the dumplings are cooked through and the wrappers are translucent.
