How to Make Traditional Eight Treasures Rice

Eight Treasures Rice, also known as Ba Bao Fan in Chinese, is a traditional Chinese dish that combines eight different ingredients to create a rich, nutritious, and flavorful meal. This dish is often served during special occasions or festivals due to its symbolic meaning and delicious taste. Below, we’ll guide you through the process of making traditional Eight Treasures Rice, from selecting the ingredients to perfecting the cooking technique.

Ingredients

To make traditional Eight Treasures Rice, you’ll need the following ingredients:

  • Glutinous Rice: 1 cup (about 200 grams), soaked in water for at least 4 hours or overnight
  • Red Beans: 1/4 cup (about 50 grams), soaked in water for at least 4 hours or overnight
  • Lotus Seeds: 1/4 cup (about 50 grams), soaked in water for at least 4 hours or overnight
  • Dried Longan: 1/4 cup (about 50 grams), soaked in water for at least 1 hour
  • Dried Red Dates: 1/4 cup (about 50 grams), soaked in water for at least 1 hour and pitted
  • Peanuts: 1/4 cup (about 50 grams), unsalted and roasted
  • Winter Melon Seeds: 1/4 cup (about 50 grams), soaked in water for at least 4 hours or overnight, peeled, and germinated (optional)
  • Goji Berries: 1/4 cup (about 50 grams), soaked in water for at least 1 hour
  • Sugar: 1/2 cup (about 100 grams), or to taste
  • Water: Enough to cover the rice and ingredients by about 1 inch (about 2.5 cm)
  • Vegetable Oil: 1 tablespoon
  • Vanilla Extract (optional): 1 teaspoon, for added flavor

Equipment

  • Large mixing bowl
  • Steamer or large pot with steaming rack
  • Cheesecloth or clean kitchen towel
  • Small bowls for soaking ingredients
  • Measuring cups and spoons
  • Sharp knife
  • Cutting board
  • Spatula or wooden spoon

Preparation

Step 1: Soaking the Ingredients

Soak the Glutinous Rice: Place the glutinous rice in a large mixing bowl and cover with water. Soak for at least 4 hours or overnight.

Soak the Red Beans, Lotus Seeds, and Winter Melon Seeds: Place the red beans, lotus seeds, and winter melon seeds in separate small bowls and cover with water. Soak for at least 4 hours or overnight.

Soak the Dried Longan and Red Dates: Place the dried longan and red dates in separate small bowls and cover with water. Soak for at least 1 hour.

Prepare the Peanuts and Goji Berries: If using raw peanuts, roast them lightly until they are fragrant. Soak the goji berries in water for at least 1 hour.

Step 2: Preparing the Ingredients

Pit the Red Dates: Once the red dates have soaked, use a sharp knife to remove the pits.

Peel and Germinate the Winter Melon Seeds (optional): If using winter melon seeds, peel off the outer shell and germinate them by soaking them in water for an additional day or until small sprouts appear.

Drain the Ingredients: Drain the soaked glutinous rice, red beans, lotus seeds, winter melon seeds (if using), dried longan, and goji berries in a colander. Pat them dry with paper towels if necessary.

Step 3: Assembling the Eight Treasures Rice

Layer the Ingredients: In a large mixing bowl, layer the glutinous rice, red beans, lotus seeds, dried longan, red dates, peanuts, winter melon seeds (if using), and goji berries in an alternating pattern. Try to distribute the ingredients evenly throughout the rice.

Add Sugar: Sprinkle the sugar evenly over the layered ingredients. Adjust the amount of sugar to taste.

Mix Gently: Use a spatula or wooden spoon to gently mix the ingredients together, being careful not to crush the dried fruits and seeds.

Step 4: Steaming the Eight Treasures Rice

Prepare the Steamer: Fill a large pot with water and bring it to a boil. Place a steaming rack inside the pot.

Line the Steamer: Line the steaming rack with a cheesecloth or clean kitchen towel. This will prevent the rice from sticking to the rack and allow for even steaming.

Transfer the Rice Mixture: Transfer the mixed rice and ingredients to the lined steaming rack. Spread it out evenly in a single layer.

Cover and Steam: Cover the pot with a tight-fitting lid and steam the rice mixture for about 1 to 1.5 hours, or until the rice is tender and the ingredients are cooked through. Check the water level in the pot occasionally and add more water if necessary to prevent it from drying out.

Check for Doneness: After 1 hour, use a toothpick or fork to insert into the center of the rice mixture. If it comes out clean, the rice is done. If not, continue steaming for an additional 15-30 minutes and check again.

Step 5: Serving the Eight Treasures Rice

Remove from Steamer: Once the rice is done, carefully remove the steaming rack from the pot using tongs or oven mitts. Let the rice cool slightly.

Flavor with Vanilla Extract (optional): If using vanilla extract, drizzle it over the top of the rice and gently fold it in using a spatula or wooden spoon.

Serve Warm: Serve the Eight Treasures Rice warm, garnished with additional goji berries or a sprinkle of sugar if desired.
