How to Make Delicious Bean Flowers

Bean flowers, also known as tofu pudding or soft tofu, are a traditional Chinese dessert that can be enjoyed both sweet and savory. They are made from soybeans and coagulated with a special agent to form a tender and smooth texture. Below, I will guide you through the step-by-step process of making delicious bean flowers at home.

Ingredients Preparation

To make delicious bean flowers, you will need the following ingredients:

  • Soybeans: About 150 grams. You can adjust the quantity based on how many servings you want to prepare.
  • Water: Approximately 1,300 milliliters. This is excluding the water used for soaking the soybeans.
  • Coagulant: About 3 grams of glucose delta-lactone (GDL) or other suitable coagulants like gypsum.
    Soaking the Soybeans
  • Cleaning the Soybeans: First, rinse the soybeans thoroughly under running water to remove any dirt or impurities.
  • Soaking: Place the cleaned soybeans in a large bowl and cover them with enough water to submerge them completely. Let them soak for at least 6 hours or overnight. Soaking helps the soybeans absorb water, making them easier to blend into a smooth.
  • Refrigeration (Optional): If you’re soaking the soybeans in the summer, you can place the bowl in the refrigerator to prevent spoilage.

Blending the Soybeans into Soy Milk

Draining: After soaking, drain the soybeans and discard the soaking water.

Blending: Add the soaked soybeans and 1,300 milliliters of fresh water to a blender or a soy milk maker. Blend until you get a smooth and creamy soy milk.

Filtering: Pour the blended soy milk through a cheesecloth or a fine-mesh strainer to remove any remaining soybean residue. This step is crucial for achieving a smooth and silky texture for your bean flowers. Repeat the filtering process if necessary to ensure no lumps remain.

Cooking the Soy Milk

Heating: Pour the filtered soy milk into a large pot and heat it over medium-high heat. Stir occasionally to prevent scorching.

Boiling: Once the soy milk starts to boil, reduce the heat to low and let it simmer for about 5 minutes. This step helps to further cook the soy milk and develop its flavor.

Cooling: Remove the pot from the heat and let the soy milk cool to about 80-85°C (176-185°F). This temperature is ideal for adding the coagulant.

Adding the Coagulant

Preparing the Coagulant: While the soy milk is cooling, dissolve the glucose delta-lactone in a small bowl with a few tablespoons of cold water. Stir until completely dissolved.

Pouring the Coagulant: Quickly pour the dissolved coagulant into the pot of soy milk, stirring gently with a chopstick or a whisk in a circular motion. Avoid stirring too vigorously, as this can break up the forming bean flowers.

Setting: Pour the soy milk into a mold or a large bowl. Cover it with a lid or plastic wrap to prevent dust from entering. Let it sit undisturbed for about 20-30 minutes, or until the soy milk has completely coagulated into soft and tender bean flowers.

Serving the Bean Flowers

Chilling (Optional): For a refreshing treat, you can refrigerate the bean flowers for a few hours before serving. This will make them even more delicate and flavorful.

Sweet or Savory: Bean flowers can be enjoyed both sweet and savory. For a sweet version, top them with syrup, honey, or fresh fruits. For a savory version, add toppings like chopped scallions, chili oil, soy sauce, or sesame oil.

Garnishing: You can also garnish your bean flowers with chopped nuts, seeds, or dried fruits for added texture and flavor.

Precision in Temperature: The temperature of the soy milk when adding the coagulant is crucial. It should be around 80-85°C (176-185°F). Too hot or too cold can affect the coagulation process.

Gentle Stirring: When adding the coagulant, stir gently and avoid creating too many bubbles. This will ensure a smoother texture for your bean flowers.

Patience: Let the soy milk set undisturbed for the required time. Rushing the process can result in uneven coagulation.

Filtering: Proper filtering of the soy milk is essential for achieving a smooth and silky texture. Use a cheesecloth or a fine-mesh strainer to remove all lumps and impurities.
