How Do You Make No Bake Cookies with Oatmeal

If you’re looking for a quick and easy dessert option that doesn’t require turning on the oven, no-bake cookies are the perfect choice. These delicious treats are simple to make and can be customized with various ingredients to suit your taste preferences. In this article, we’ll focus on making no-bake cookies with oatmeal, providing detailed explanations and highlighting key steps to ensure you get perfect results.

Ingredients You’ll Need

To make no-bake cookies with oatmeal, you’ll need the following ingredients:

  • 2 cups (160g) rolled oats
  • 1/2 cup (60g) unsweetened cocoa powder
  • 1/2 cup (115g) unsalted butter
  • 2 cups (400g) granulated sugar
  • 1/2 cup (120ml) whole milk
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3 cups (180g) chopped nuts (optional, such as walnuts or pecans)

Equipment You’ll Need

While no-bake cookies are incredibly simple to make, you’ll still need a few pieces of equipment:

  • A large saucepan
  • A wooden spoon or silicone spatula
  • Measuring cups and spoons
  • Mixing bowls
  • Parchment paper or wax paper
  • Baking sheets

Preparing Your Ingredients

Before you start cooking, make sure all your ingredients are ready and measured out. This will help you work more efficiently and ensure your cookies come together smoothly.

  • Measure out the rolled oats and set them aside.
  • Measure out the cocoa powder and set it aside.
  • Chop any nuts you plan to use and set them aside.
  • Measure out the butter, sugar, milk, salt, and vanilla extract.

Making the Cookie Base

Now, let’s get started on making the cookie base. This is the part that will be cooked on the stovetop and then mixed with the dry ingredients to form your cookies.

Melt the Butter and Sugar: In a large saucepan, combine the unsalted butter and granulated sugar. Place the saucepan over medium heat and stir constantly until the butter is melted and the sugar is fully incorporated.

Cook the Mixture: Continue cooking the mixture, stirring frequently, until it reaches 235°F (113°C) on a candy thermometer. This is known as the soft-ball stage. If you don’t have a candy thermometer, you can test the mixture by dropping a small amount into cold water. If it forms a soft ball that flattens when pressed, it’s ready.

Add Milk and Vanilla: Once the mixture reaches the correct temperature, remove it from the heat and stir in the milk and vanilla extract. Be careful, as the mixture will bubble up when you add the liquid.

Combine with Dry Ingredients: Now, quickly stir in the cocoa powder, rolled oats, and salt until the mixture is well combined. If you’re adding nuts, fold them in at this point. The mixture will be quite thick and sticky.

Forming and Setting the Cookies

Once you have your cookie mixture ready, it’s time to form the cookies and let them set.

Prepare Your Work Surface: Line two baking sheets with parchment paper or wax paper. This will prevent the cookies from sticking and make cleanup easier.

Drop the Cookies: Using a spoon or a small cookie scoop, drop rounded tablespoonfuls of the cookie mixture onto the prepared baking sheets. Space them out slightly, as they will spread a bit as they set.

Flatten the Cookies (Optional): If you prefer flatter cookies, you can use the back of a spoon to gently press down on each cookie. This is entirely optional and depends on your personal preference.

Allow to Set: Let the cookies sit at room temperature for about 2 hours, or until they are set and firm to the touch. You can speed up the setting process by refrigerating the cookies for about 1 hour.

Customizing Your Cookies

No-bake cookies with oatmeal are incredibly versatile and can be customized to suit your taste preferences. Here are a few ideas to get you started:

Add-Ins: Mix in various add-ins such as chopped dried fruit, peanut butter chips, or white chocolate chips.

Extracts: Replace the vanilla extract with almond, mint, or orange extract for different flavors.

Spices: Add a pinch of cinnamon, nutmeg, or ginger to your cookie mixture for a warm, spicy flavor.

Gluten-Free: Use gluten-free oats and ensure all other ingredients are gluten-free to make these cookies suitable for those with gluten sensitivities.

Storing Your Cookies

Once your no-bake cookies with oatmeal are set, you can store them in an airtight container at room temperature for up to a week. If you prefer, you can also freeze them for longer storage. To freeze, place the cookies in a single layer on a baking sheet and freeze until solid. Then, transfer them to an airtight container or freezer bag. They can be thawed at room temperature or enjoyed frozen for a chewy texture.

Conclusion

Making no-bake cookies with oatmeal is a quick and easy way to enjoy a delicious treat without turning on the oven. With a few simple ingredients and a bit of time, you can create customizable cookies that are perfect for snacking, gift-giving, or enjoying with a glass of milk. Whether you’re a baking novice or an experienced chef, these no-bake cookies are sure to become a staple in your dessert repertoire. Happy baking!
