  • Onion: 1 (large, chopped)
  • Carrots: 2 (medium, sliced)
  • Celery: 2 stalks (chopped)
  • Potatoes: 2 (medium, peeled and cubed)

Seasonings

  • Salt: to taste
  • White pepper: a pinch (optional)
  • Soy sauce: 2 tablespoons (for color and flavor)
  • Sesame oil: 1 teaspoon (optional, for garnish)
  • Starch: Cornstarch slurry (for thickening the broth, if desired)
  • Vegetables (optional): Mushrooms, tofu, spinach, etc.

The quality of the beef is crucial for a delicious beef soup. Choose beef brisket or shank as these cuts are rich in collagen, making the broth more flavorful and thick. Ensure the beef is fresh and free from any visible fats or sinew.
