How to Make Shrimp and Broccoli Chinese Style

Shrimp and Broccoli is a classic Chinese dish that combines the delicate flavor of shrimp with the crisp texture and nutritious benefits of broccoli. This dish is not only visually appealing but also packed with flavor. Whether you’re a seasoned chef or a home cook looking to impress, this guide will take you through every step to create a perfect Shrimp and Broccoli stir-fry.

Ingredients Preparation

Before starting, ensure you have all the necessary ingredients ready. Here’s what you’ll need:

  • Shrimp: 400 grams, peeled and deveined
  • Broccoli: 1 medium head, cut into bite-sized florets
  • Garlic: 3 cloves, minced
  • Ginger: 1 tablespoon, minced
  • Oyster sauce: 2 tablespoons
  • Soy sauce: 1 tablespoon
  • Sesame oil: 1 teaspoon
  • Cornstarch: 1 tablespoon (for thickening)
  • Sugar: 1/2 teaspoon (optional, for sweetness)
  • Salt: to taste
  • Pepper: to taste
  • Vegetable oil: for stir-frying
  • Red pepper flakes: 1 teaspoon (optional, for a bit of spice)
  • Green onions: chopped, for garnish

Preparation Steps

Prepare the Shrimp

  • Peel and devein the shrimp. This can be done by using a shrimp peeler or a sharp knife.
  • Pat the shrimp dry with paper towels to remove any excess moisture. This will help them cook evenly and develop a nice sear.
  • Season the shrimp with a pinch of salt and pepper.

Prepare the Broccoli

  • Cut the broccoli head into bite-sized florets.
  • You can also use the broccoli stems if they are tender. Peel the stems and slice them into thin strips.
  • Blanch the broccoli in boiling water for about 2 minutes until they turn bright green but are still crisp.
  • Drain and set aside. Blanching helps to retain the vibrant color and texture of the broccoli.

Prepare the Sauce

In a small bowl, mix together the oyster sauce, soy sauce, sesame oil, sugar, cornstarch, and a pinch of salt and pepper. Stir until the cornstarch is fully dissolved. This will be your stir-fry sauce.

Cooking Instructions

Heat the Pan

Place a large wok or skillet over medium-high heat. Add about 2 tablespoons of vegetable oil.

Let the oil heat up until it’s hot but not smoking. This ensures a good sear on the shrimp and vegetables.

Stir-Fry the Garlic and Ginger

Add the minced garlic and ginger to the hot oil. Stir-fry for about 30 seconds until fragrant. Be careful not to let the garlic burn, as it will turn bitter.

Stir-Fry the Shrimp

Add the seasoned shrimp to the wok in a single layer, avoiding overcrowding. Stir-fry for about 2 minutes on each side until they turn pink and opaque.

If your wok is small, you may need to do this in batches to avoid overcrowding and ensure even cooking.

Add the Broccoli

Once the shrimp are cooked, push them to the side of the wok. Add the blanched broccoli to the empty space. Stir-fry for about 1 minute until heated through.

Add the Sauce

Pour the prepared sauce over the shrimp and broccoli. Stir well to combine and coat all the ingredients evenly.

Cook for an additional 2-3 minutes until the sauce thickens and everything is heated through. If the sauce is too thick, you can add a little water to reach your desired consistency.

Add Optional Ingredients

If you like a bit of spice, sprinkle in the red pepper flakes and stir well.

Taste and adjust the seasoning with more salt and pepper if needed.

Garnish and Serve

Remove the wok from heat. Sprinkle with chopped green onions for garnish.

Serve the Shrimp and Broccoli stir-fry immediately over a bed of steamed rice or noodles for a complete meal.

Tips for Perfect Stir-Frying

Use a Hot Pan: Stir-frying requires a hot pan to sear the ingredients and lock in flavor. Make sure your wok or skillet is hot before adding oil.

Don’t Overcrowd: Overcrowding the pan will lower the temperature and steam the ingredients instead of stir-frying them. Work in batches if necessary.
