To prepare a classic baked custard, preheat your oven to 325°F (160°C). In a mixing bowl, whisk together 4 eggs and ½ cup of sugar until well combined. Gradually add 2 cups of warm milk and 1 teaspoon of vanilla extract, continuing to whisk. Pour the mixture into ramekins, place them in a baking dish, and add hot water to the dish until it reaches halfway up the sides of the ramekins. Bake for 45 minutes or until the custard is set but still slightly jiggly in the center. Allow it to cool before serving.

Crème Brûlée

Crème brûlée, a sophisticated variation of custard, incorporates a caramelized sugar crust. Follow the same custard preparation method, but use heavy cream instead of milk for a richer texture. After baking, chill the custard. Just before serving, sprinkle a thin layer of sugar on top and caramelize it using a kitchen torch or broiler until a golden crust forms. Separate 4 eggs, placing the yolks in one bowl and the whites in another. Whisk the yolks with 2 tablespoons of sugar until thick and pale. Stir the melted chocolate into the yolk mixture. For the lemon filling, combine 1½ cups of sugar, ¼ cup of cornstarch, and a pinch of salt in a saucepan. Gradually whisk in 1½ cups of water, ½ cup of lemon juice, and the zest of 2 lemons. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat and stir in 4 egg yolks, beaten, followed by 2 tablespoons of butter. Pour the hot filling into the baked pie crust. For the meringue, beat 4 egg whites until soft peaks form, then gradually add ½ cup of sugar, beating until stiff peaks form. Spread the meringue over the hot filling, sealing the edges. Bake at 350°F (175°C) for 10-12 minutes until the meringue is golden brown. Cool before serving.

5. Timeless Sponge Cakes and Genoise

Eggs are crucial in sponge cakes and genoise, providing lift and structure without the need for chemical leaveners.

Classic Sponge Cake

Preheat your oven to 350°F (175°C) and prepare a cake pan by greasing and flouring it. Separate 4 eggs, placing the yolks in one bowl and the whites in another. Beat the yolks with ½ cup of sugar until pale and thick. In a separate bowl, beat the egg whites with a pinch of salt until soft peaks form, then gradually add ¼ cup of sugar, beating until stiff peaks form. Fold the yolk mixture into the whites gently. Sift 1 cup of flour over the mixture and fold in until just combined. Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick inserted into the center comes out clean. Cool before serving.

Genoise

Genoise is a light and airy Italian sponge cake. Preheat your oven to 350°F (175°C) and prepare a cake pan by greasing and flouring it. In a heatproof bowl, whisk together 4 whole eggs and 1 cup of sugar. Set the bowl over a pot of simmering water and whisk constantly until the mixture is warm and the sugar has dissolved. Remove from heat and continue to beat with an electric mixer until the mixture is thick and tripled in volume. Sift 1 cup of flour over the mixture and gently fold in. Pour the batter into the prepared pan and bake for 20-25 minutes until a toothpick inserted into the center comes out clean. Cool before serving.

6. Silky Smooth Flans and Puddings

Flans and puddings are creamy desserts where eggs provide a smooth and velvety texture.

Classic Flan

Preheat your oven to 350°F (175°C). In a small saucepan, melt ¾ cup of sugar over medium heat, stirring constantly until it turns into a golden caramel. In a blender, combine 4 eggs, 1 can of sweetened condensed milk, 1 can of evaporated milk, and 1 teaspoon of vanilla extract. In a saucepan, whisk together ½ cup of sugar, ¼ cup of cocoa powder, 3 tablespoons of cornstarch, and a pinch of salt. Gradually whisk in 2½ cups of milk. Cook over medium heat, stirring constantly, until the mixture thickens and begins to boil. Remove from heat and stir in 3 ounces of chopped dark chocolate, 2 tablespoons of butter, and 1 teaspoon of vanilla extract until smooth. Pour the pudding into serving dishes and chill before serving.
