How to Cook Szechuan Soup?

Szechuan soup, also known as Sichuan hot and sour soup, is a popular dish in Chinese cuisine. It’s a spicy and sour soup that’s perfect for cold days or when you’re feeling under the weather. In this article, we’ll go over everything you need to know to cook delicious Szechuan soup at home.

Ingredients:

  • 4 cups of chicken broth
  • 1/2 cup of bamboo shoots, sliced
  • 1/2 cup of wood ear mushrooms, sliced
  • 1/2 cup of tofu, diced
  • 1/4 cup of soy sauce
  • 1/4 cup of rice vinegar
  • 1 tablespoon of chili oil
  • 1 tablespoon of Szechuan peppercorns, crushed
  • 1 tablespoon of cornstarch
  • 1 egg, lightly beaten
  • 1 green onion, chopped
  • Salt and pepper to taste

Preparing the Ingredients:

Before you start cooking, you need to prepare the ingredients. Start by slicing the bamboo shoots, wood ear mushrooms, and tofu into bite-sized pieces. If you’re using dried wood ear mushrooms, soak them in hot water for 30 minutes before slicing.

Making the Soup Base:

To make the soup base, heat the chicken broth in a pot over medium-high heat. Add the sliced bamboo shoots, wood ear mushrooms, and tofu to the pot and bring it to a boil. Reduce the heat to low and let the soup simmer for 10-15 minutes, or until the vegetables are tender.

Adding the Seasonings:

Once the vegetables are tender, it’s time to add the seasonings. Add the soy sauce, rice vinegar, chili oil, and crushed Szechuan peppercorns to the pot and stir everything together. Taste the soup and add salt and pepper to your liking.

Thickening the Soup:

To thicken the soup, mix the cornstarch with a tablespoon of cold water in a small bowl. Slowly pour the cornstarch mixture into the soup while stirring constantly. Let the soup simmer for another 2-3 minutes, or until it has thickened to your desired consistency.

Creating Egg Ribbons:

To create egg ribbons in the soup, turn off the heat and slowly pour the beaten egg into the pot while stirring the soup in a circular motion. This will create egg ribbons in the soup.

Garnishing and Serving:

Finally, garnish the soup with chopped green onion and serve hot.

Tips:

  • If you can’t find Szechuan peppercorns, you can substitute them with black peppercorns or red pepper flakes.
