How to Cook Chinese Pork Steaks

  • 1/4 cup hoisin sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon sesame oil
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Instructions:

In a medium bowl, whisk together all the marinade ingredients until well combined.

Place the pork steaks in a large, resealable plastic bag or a shallow dish. Pour the marinade over the steaks, making sure they are evenly coated.

Seal the bag or cover the dish, and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld and the marinade to tenderize the meat.

Cooking the Pork Steaks

Now that your pork steaks have marinated, it’s time to cook them. You have a few options when it comes to cooking method: grilling, stovetop, or oven. Here’s how to cook the steaks using each method:

Grilling Method:

Preheat your grill to medium-high heat. Oil the grill grates to prevent sticking.

Remove the pork steaks from the marinade, allowing any excess to drip off.

Grill the steaks for about 6-7 minutes per side, or until they reach your desired level of doneness. Use a meat thermometer to check the internal temperature; for medium-rare, it should be around 145°F (63°C), and for medium, around 160°F (71°C).

Remove the steaks from the grill and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute, making the steaks even more tender.

Stovetop Method:

Heat a large, heavy-bottomed skillet over medium-high heat. Add a tablespoon of oil and swirl to coat the bottom of the pan.

Remove the pork steaks from the marinade, allowing any excess to drip off.

Sear the steaks for about 4-5 minutes per side, or until they are nicely browned and have a nice crust. Reduce the heat to medium if the steaks are browning too quickly.

If desired, you can finish cooking the steaks in the oven. Preheat your oven to 375°F (190°C). Transfer the skillet to the oven and cook for an additional 5-7 minutes, or until the steaks reach your desired level of doneness.

Remove the steaks from the skillet and let them rest for 5-10 minutes before slicing.

Oven Method:

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil.

Remove the pork steaks from the marinade, allowing any excess to drip off. Place the steaks on the prepared baking sheet.

Bake for about 12-15 minutes, or until the steaks reach your desired level of doneness. Use a meat thermometer to check the internal temperature.

Remove the steaks from the oven and let them rest for 5-10 minutes before slicing.

Serving the Pork Steaks

Once your pork steaks have rested, it’s time to slice and serve them. Use a sharp knife to slice the steaks into thin strips or bite-sized pieces. Serve them hot, with your favorite sides and dipping sauces.

Side Dish Suggestions:

  • Steamed jasmine or brown rice
  • Roasted vegetables, such as broccoli, bell peppers, or carrots
