How to Make Chinese Chicken and Vegetables

Asian chicken stir fry is a delicious and healthy dish that’s quick and easy to make. It combines tender chicken, colorful vegetables, and a flavorful sauce that brings everything together. This dish is perfect for a busy weeknight dinner, but it’s also impressive enough to serve to guests. In this article, we’ll walk you through every step of making a delicious Asian chicken stir fry from scratch, with plenty of tips to ensure your meal turns out perfect.

Ingredients for Asian Chicken Stir Fry

Before you start cooking, it’s essential to gather all the ingredients. Here’s a list of what you’ll need:

For the Stir Fry

  • 2 boneless, skinless chicken breasts (cut into thin strips)
  • 1 tablespoon olive oil (or sesame oil for an extra Asian flavor)
  • 1 red bell pepper (sliced thinly)
  • 1 yellow bell pepper (sliced thinly)
  • 1 medium carrot (julienned)
  • 1 medium zucchini (sliced into half-moons)
  • 1 small onion (sliced thinly)
  • 2 cloves garlic (minced)
  • 1 tablespoon fresh ginger (minced)
  • 1 cup broccoli florets
  • 1/2 cup snow peas (optional)
  • 2 tablespoons green onions (chopped for garnish)

For the Sauce

  • 3 tablespoons soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or brown sugar
  • 1 teaspoon cornstarch (to thicken the sauce)
  • 1/2 cup chicken broth or water
  • A pinch of red pepper flakes (optional for spice)

For Serving

  • Cooked rice (white, brown, or jasmine rice works well)

Step-by-Step Guide to Making Asian Chicken Stir Fry

Now that you have all your ingredients ready, let’s break down the steps to create the perfect Asian chicken stir fry.

Step 1: Prepare the Chicken

Start by preparing the chicken. To do this, slice the boneless, skinless chicken breasts into thin strips. Thin strips will cook faster and absorb the flavors of the stir fry better. Once sliced, set the chicken aside while you prep the vegetables.

Step 2: Prepare the Vegetables

The key to a great stir fry is having all the vegetables prepared and ready to go before you start cooking. Slice the bell peppers, zucchini, and onion thinly so they cook evenly. Julienne the carrot into thin strips, and break the broccoli into small florets. Mince the garlic and ginger finely to release their flavors. You can also slice the green onions for garnish. Having everything ready ensures that your stir fry will cook quickly and smoothly.

Step 3: Make the Stir Fry Sauce

The sauce is what gives the stir fry its signature Asian flavor. To make it, combine soy sauce, hoisin sauce, oyster sauce, rice vinegar, sesame oil, honey (or brown sugar), chicken broth, and cornstarch in a small bowl. Stir the ingredients together until the cornstarch is dissolved. This will give the sauce a smooth texture and help it thicken when it’s cooked. If you like a bit of heat, add red pepper flakes to taste.

Step 4: Cook the Chicken

Heat a large skillet or wok over medium-high heat. Add 1 tablespoon of olive oil (or sesame oil for extra flavor). Once the oil is hot, add the chicken strips in a single layer. Don’t overcrowd the pan; if necessary, cook the chicken in batches. Stir occasionally to ensure the chicken cooks evenly and turns golden brown. Cook for about 5-7 minutes, or until the chicken is fully cooked and no longer pink in the center. Once cooked, remove the chicken from the pan and set it aside.

Step 5: Stir Fry the Vegetables

In the same pan, add a little more oil if necessary. First, add the garlic and ginger. Stir quickly for about 30 seconds until fragrant. Then, add the carrots, bell peppers, zucchini, broccoli, and snow peas (if using). Stir fry the vegetables for 3-4 minutes, or until they are tender but still crisp. The key to a good stir fry is not overcooking the vegetables; they should retain their color and crunch.

Step 6: Add the Chicken Back to the Pan

Once the vegetables are cooked to your liking, add the cooked chicken back into the pan. Stir everything together to combine the chicken with the vegetables.

Step 7: Add the Stir Fry Sauce

Pour the stir fry sauce over the chicken and vegetables in the pan. Stir well to coat everything in the sauce. Let the sauce simmer for 2-3 minutes. This will allow the cornstarch to thicken the sauce and give it a glossy finish. If the sauce becomes too thick, you can add a little more chicken broth or water to loosen it up.

Step 8: Serve the Stir Fry

Once the stir fry is ready, serve it over a bed of freshly cooked rice. Garnish with chopped green onions for a burst of fresh flavor and color.

Tips for Making the Perfect Asian Chicken Stir Fry

Use High Heat: Stir frying is all about cooking quickly over high heat. Make sure your pan or wok is hot before you add the ingredients to ensure everything cooks quickly and evenly.

Don’t Overcrowd the Pan: If you add too much food at once, it will steam instead of stir fry. Cook the chicken in batches if necessary.

Customize Your Vegetables: You can easily customize this stir fry to include your favorite vegetables. Try adding mushrooms, baby corn, bok choy, or bean sprouts.

Adjust the Spice Level: If you prefer a spicier stir fry, you can add more red pepper flakes or a splash of chili oil to the sauce.

Use Fresh Ingredients: Fresh garlic, ginger, and vegetables will bring out the best flavors in your stir fry. Don’t substitute dried ginger or garlic powder if you want a truly authentic taste.

Marinate the Chicken (Optional): For even more flavor, marinate the chicken in a little soy sauce, sesame oil, and ginger for about 15 minutes before cooking. This step is optional but adds extra depth to the dish.

Make It Gluten-Free: To make this recipe gluten-free, use tamari instead of soy sauce and ensure that your oyster sauce is gluten-free.

Add a Crunchy Topping: For added texture, top the stir fry with some toasted sesame seeds or chopped cashews. This will give your dish a delightful crunch.

Make It Ahead: You can prep the chicken, vegetables, and sauce ahead of time. Store them separately in the fridge, and cook the stir fry when you’re ready. This makes for a quick and easy meal after a long day.
