How to Make Szechuan Shrimp: A Step-by-Step Guide

Szechuan shrimp is a delicious dish from the Szechuan province of China. Known for its bold flavors and spicy, tangy kick, this dish combines shrimp with a flavorful sauce made from chili peppers, garlic, ginger, and Szechuan peppercorns. It is a favorite in Chinese cuisine and can easily be made at home with a few simple ingredients. In this guide, we’ll go through the step-by-step process of making Szechuan shrimp from scratch.

Ingredients for Szechuan Shrimp

Before you begin, gather all the ingredients you need. This dish involves a lot of bold and aromatic flavors, so having the right ingredients is key.

For the Shrimp:

  • 1 pound large shrimp (peeled and deveined)
  • 1 tablespoon cornstarch
  • 1 tablespoon vegetable oil (for frying)

For the Szechuan Sauce:

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon chili paste or Szechuan chili sauce (adjust based on spice preference)
  • 1 teaspoon sugar
  • 1 tablespoon cornstarch (mixed with 2 tablespoons of water to make a slurry)
  • 1/2 cup water (or broth for more flavor)

For the Stir-fry:

  • 2 tablespoons vegetable oil
  • 6-8 dried Szechuan chili peppers (adjust to taste)
  • 1 tablespoon Szechuan peppercorns
  • 4 cloves garlic (finely chopped)
  • 1 tablespoon ginger (finely chopped)
  • 1 onion (sliced thin)
  • 1 bell pepper (sliced thin)
  • 2 green onions (chopped)
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Preparing the Shrimp

Peel and Devein the Shrimp: Begin by preparing your shrimp. Peel the shells off and devein them. Make sure the shrimp are cleaned thoroughly. This step is essential for a clean taste in your final dish.

Coat the Shrimp with Cornstarch: Place the cleaned shrimp in a bowl. Sprinkle the cornstarch over the shrimp and toss to coat them evenly. The cornstarch will give the shrimp a nice crisp when they’re stir-fried.

Fry the Shrimp: Heat the vegetable oil in a large pan or wok over medium-high heat. Once the oil is hot, add the shrimp in a single layer. Fry them for about 2 minutes on each side or until they turn pink and crispy. Remove the shrimp from the pan and set them aside.

Making the Szechuan Sauce

The Szechuan sauce is the heart of this dish. It has a unique flavor profile with a combination of spice, tanginess, and sweetness. Here’s how to make it:

Combine the Sauce Ingredients: In a small bowl, mix together the soy sauce, rice vinegar, hoisin sauce, chili paste (or Szechuan chili sauce), and sugar. Stir until the sugar is dissolved and the ingredients are well combined.

Add the Cornstarch Slurry: In a separate bowl, mix 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Add this to the sauce mixture to help thicken the sauce later.

Stir-frying the Vegetables

Return the Shrimp to the Pan: Add the fried shrimp back into the pan with the vegetables. Stir to combine them evenly.

Pour the Szechuan Sauce: Pour the prepared Szechuan sauce over the shrimp and vegetables. Stir everything together to coat the shrimp and vegetables in the sauce.

Let the Sauce Thicken: Allow the sauce to simmer for a few minutes until it thickens. Stir occasionally to ensure the shrimp and vegetables are evenly coated.

Adjust the Seasoning: Taste the dish and adjust the seasoning if necessary. You can add more soy sauce for saltiness or more chili paste for extra heat.

Garnish with Green Onions: Once the dish is ready, sprinkle the chopped green onions on top as a garnish. This adds a fresh crunch and color to the dish.

Serve: Serve your Szechuan shrimp over steamed rice, noodles, or on its own. Enjoy the bold and spicy flavors that come together in this delicious dish.

Tips for Making Perfect Szechuan Shrimp

Control the Heat: Szechuan shrimp is known for its spice. If you prefer a milder version, reduce the amount of dried chilies and chili paste. Alternatively, if you love spice, feel free to add more.

Use Fresh Ingredients: Fresh ginger and garlic will make a big difference in flavor. Don’t substitute with powdered versions, as the fresh ingredients bring a bright, aromatic element.

Szechuan Shrimp with Tofu: If you want a vegetarian version, you can replace shrimp with tofu. Press the tofu to remove excess moisture and cut it into cubes. Fry the tofu until golden and crispy, then follow the rest of the recipe as usual.

Szechuan Shrimp Stir-Fry: If you prefer a stir-fry with more vegetables, feel free to add more bell peppers, zucchini, or snow peas. The vegetables will absorb the flavors of the sauce and complement the shrimp perfectly.
