How to Cook Bitter Gourd Chinese Style

Bitter gourd, also known as bitter melon, is a unique vegetable that is commonly used in Chinese cuisine. Despite its strong, bitter taste, bitter gourd is valued for its health benefits and its ability to pair with a variety of savory dishes. In Chinese cooking, bitter gourd is often stir-fried, stuffed, or simmered with different ingredients to balance out its bitterness and create a delicious and nutritious meal.

In this article, we’ll explore the different ways to cook bitter gourd Chinese style, step by step. Whether you’re a beginner or a seasoned cook, these recipes are easy to follow and packed with flavor. Let’s dive into the various methods of cooking bitter gourd and learn how to make the most of this healthy vegetable.

What is Bitter Gourd?

Bitter gourd is a green, elongated vegetable with a bumpy skin and a distinctive bitter taste. It is often used in many Asian cuisines, particularly Chinese, Indian, and Southeast Asian cooking. Bitter gourd is rich in vitamins and minerals, such as vitamin C, fiber, iron, and potassium. It is also known for its potential health benefits, including promoting digestion, supporting the immune system, and helping to regulate blood sugar levels.

While its bitter flavor may not be for everyone, there are many ways to prepare bitter gourd that can balance out its natural bitterness. The following methods can make bitter gourd both tasty and enjoyable.

Preparing Bitter Gourd

Before cooking bitter gourd, it is important to prepare it properly to reduce its bitterness. Here’s how to get your bitter gourd ready:

Washing: Wash the bitter gourd thoroughly to remove any dirt and impurities.

Peeling: While the skin of the bitter gourd is edible, some prefer to peel it to lessen its bitterness. You can peel part of the skin or leave it on, depending on your taste.

Slicing: Slice the bitter gourd into rounds, removing the seeds inside. The seeds are edible but may add to the bitterness, so it’s often a good idea to remove them before cooking.

Salting: To reduce the bitterness, sprinkle salt over the sliced bitter gourd and let it sit for 10-15 minutes. The salt will help draw out some of the bitter compounds. Afterward, rinse the bitter gourd under cold water to remove the excess salt.

Now, you’re ready to cook the bitter gourd using various Chinese cooking methods.

Stir-Frying Bitter Gourd with Eggs

One of the most popular Chinese ways to cook bitter gourd is by stir-frying it with eggs. This method helps to balance the bitterness of the gourd with the richness of the eggs, creating a flavorful and satisfying dish.

Ingredients:

  • 1 bitter gourd
  • 2 large eggs
  • 2 tablespoons of vegetable oil
  • 1 teaspoon of garlic (minced)
  • 1 tablespoon of soy sauce
  • 1/2 teaspoon of sugar
  • Salt and pepper to taste

Instructions:

Prepare the Bitter Gourd: Wash, peel (optional), and slice the bitter gourd into thin rounds. Salt the bitter gourd and set it aside to let it release its bitterness.

Prepare the Eggs: In a bowl, beat the eggs lightly with a pinch of salt and pepper.

Stir-Fry Garlic: Heat the vegetable oil in a large pan or wok over medium heat. Add the minced garlic and stir-fry until fragrant.

Cook the Bitter Gourd: Add the bitter gourd slices to the pan and stir-fry for about 3-4 minutes. Add the soy sauce and sugar, and continue to cook for another 2-3 minutes until the bitter gourd is tender.

Add Eggs: Pour the beaten eggs over the bitter gourd. Allow the eggs to cook without stirring for a minute, then stir gently to scramble the eggs and mix them with the bitter gourd.

Season and Serve: Once the eggs are cooked through and the bitter gourd is tender, taste and adjust the seasoning with salt and pepper. Serve hot with steamed rice.

This simple stir-fry is a delicious and healthy dish that is perfect for a quick meal.

Bitter Gourd and Pork Stir-Fry

Bitter gourd pairs well with pork, as the savory flavor of the pork helps to balance the bitterness of the gourd. This stir-fry is a staple in many Chinese households and is a great way to enjoy the health benefits of bitter gourd.

Ingredients:

  • 1 bitter gourd
  • 200g pork (sliced into thin strips)
  • 2 tablespoons of vegetable oil
  • 2 cloves garlic (minced)
  • 1 tablespoon of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 teaspoon of sugar
  • Salt and pepper to taste

Instructions:

Prepare the Bitter Gourd: Wash, peel (optional), and slice the bitter gourd into thin rounds. Salt the bitter gourd and let it sit for 10 minutes to draw out the bitterness. Rinse the gourd under cold water and set aside.

Prepare the Pork: Slice the pork into thin strips. If the pork is too lean, you can add a little oil or marinate it with some soy sauce and a pinch of cornstarch for tenderness.

Stir-Fry the Pork: Heat the oil in a wok or large skillet over medium-high heat. Add the sliced pork and stir-fry until it is browned and cooked through, about 3-4 minutes. Remove the pork from the pan and set it aside.

Cook the Bitter Gourd: In the same pan, add a bit more oil if necessary, then stir-fry the garlic until fragrant. Add the bitter gourd and cook for 4-5 minutes, stirring occasionally, until the gourd becomes tender.

Combine Pork and Gourd: Return the cooked pork to the pan. Add soy sauce, oyster sauce, and sugar. Stir to combine and cook for another 2-3 minutes, allowing the flavors to meld together.

Season and Serve: Adjust the seasoning with salt and pepper to taste. Serve the stir-fry hot with steamed rice.

Stuffed Bitter Gourd

In some regions of China, bitter gourd is stuffed with meat or seafood for a more elaborate dish. Stuffing bitter gourd with ground pork or shrimp creates a savory contrast to the gourd’s bitterness.

Ingredients:

  • 1 large bitter gourd
  • 200g ground pork (or shrimp)
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon white pepper
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions:

Prepare the Bitter Gourd: Wash and peel (optional) the bitter gourd. Cut the gourd into 2-3 inch sections, then carefully scoop out the seeds using a spoon or a melon baller. Salt the inside of the gourd and set it aside to release the bitterness. Rinse the gourd afterward.

Prepare the Stuffing: In a bowl, combine the ground pork (or shrimp), soy sauce, sesame oil, salt, and white pepper. Mix until well combined. If you are using pork, you can add a little cornstarch to help bind the mixture.

Stuff the Gourd: Carefully stuff the hollowed-out bitter gourd pieces with the meat mixture. Press down gently to pack the stuffing inside.

Simmer: In a large pot, add the stuffed bitter gourd pieces and pour in about 1/4 cup of water. Cover the pot and simmer over low heat for 20-30 minutes, or until the gourd is tender and the meat is cooked through.

Serve: Remove from the pot and serve hot. This dish is often enjoyed with steamed rice.

Bitter Gourd Soup

Bitter gourd is also a great addition to soups. A simple bitter gourd soup can be both refreshing and soothing, especially during hot weather. The light broth combined with the natural flavors of bitter gourd creates a comforting dish.

Ingredients:

  • 1 bitter gourd
  • 100g chicken or pork ribs (optional)
  • 1-2 slices of ginger
  • 4 cups of chicken or vegetable broth
  • Salt to taste

Instructions:

Prepare the Bitter Gourd: Wash, peel (optional), and slice the bitter gourd. Remove the seeds if desired.

Prepare the Meat: If using chicken or pork ribs, rinse them and cut into smaller pieces. Blanch the meat in boiling water for a few minutes to remove impurities, then drain and set aside.

Cook the Soup: In a large pot, add the broth and bring to a boil. Add the meat, ginger, and bitter gourd. Reduce the heat and let it simmer for 20-30 minutes, or until the meat is tender and the bitter gourd is cooked through.

Season: Add salt to taste, then remove the soup from heat. Serve hot.

Conclusion

Bitter gourd is a nutritious and flavorful vegetable that is a staple in Chinese cooking. While its bitter taste may seem intimidating at first, it can be easily balanced with other ingredients like eggs, pork, or rich broths. Whether you stir-fry, stuff, or simmer bitter gourd, there are countless ways to enjoy this healthy vegetable.

By following the methods outlined in this article, you can create a variety of delicious dishes that highlight the unique flavor of bitter gourd. Experiment with these recipes to discover your favorite way to enjoy bitter gourd Chinese style. Happy cooking!
