How to Make Chinese Fish Soup

Fish soup is a staple in Chinese cuisine, celebrated for its delicate flavor, creamy texture, and immense nutritional benefits. This article will guide you through the process of making a traditional and delicious Chinese fish soup, complete with tips and variations to suit your taste.

Ingredients

To make a basic Chinese fish soup, you will need:

Fish: A fresh, whole fish such as crucian carp, carp, or catfish (about 1-1.5 kg). Ensure the fish is scaled, gutted, and cleaned.

Vegetables: 1 medium-sized white radish (finely shredded), 1/4 block of tofu (cut into strips), 4 slices of ginger, and 1 green onion.

Spices and Seasonings: 1/2 teaspoon of salt (or to taste), 2 liters of hot water, 1 tablespoon of cooking oil, and coriander for garnishing. Optionally, you can add 1 teaspoon of white pepper for extra flavor.

Preparation

  • Scaling and Cleaning the Fish
  • Begin by scaling the fish thoroughly to remove any scales.
  • Use a sharp knife to make a clean cut around the gills and remove them.
  • Open the fish’s belly and remove the guts and any black membrane inside. Rinse the fish well under running water to ensure it is completely clean.
  • Pat the fish dry with paper towels to remove any excess moisture.
  • Preparing the Vegetables and Spices
  • Peel and finely shred the white radish.
  • Cut the tofu into thin strips.
  • Slice the ginger and green onion.

Cooking Steps

Searing the Fish

  • Heat a little oil in a large pot or wok over medium heat.
  • Carefully slide the drained fish into the pot. Let it cook for about 30 seconds on one side until it turns slightly brown.
  • Turn the fish over and continue frying the second side until it is also lightly browned. This helps to seal in the juices and adds flavor to the soup.

Boiling the Soup

  • Pour in about 2 liters of hot water (or enough to almost cover the fish’s body).
  • Add the sliced ginger and green onion.
  • Turn up the heat and bring the water to a boil.
  • Once boiling, reduce the heat to low and let the soup simmer for about 15-20 minutes. This allows the flavors to meld together and the fish to cook gently.

Removing Impurities

  • Skim off any foam that rises to the surface during the simmering process. This helps to keep the soup clear and free of impurities.

Adding Vegetables

  • After simmering for 15-20 minutes, remove the fish from the pot and set it aside on a plate. You can remove the bones and flake the fish meat if desired, but it’s also traditional to leave the fish whole.
  • Add the shredded white radish and tofu strips to the soup.
  • Continue heating for another 2-3 minutes until the vegetables are tender.

Seasoning

  • Add salt to taste. You can also add a pinch of white pepper if you like.
  • Taste the soup and adjust the seasoning as needed.

Serving

  • Ladle the hot soup into bowls.
  • Garnish with chopped coriander for a fresh, aromatic touch.
  • If you’ve removed the fish bones, you can flake the fish meat and divide it among the bowls of soup.
