How to Make Cantonese Fried Rice

Cantonese Fried Rice, also known as Guangzhou Fried Rice, is a classic Chinese dish that combines the flavors of various ingredients with cooked rice. This dish is not only delicious but also carries cultural significance. Below, I will guide you through the process of making Cantonese Fried Rice with simple, easy-to-follow steps.

Preparation

Before starting, ensure you have all the necessary ingredients and equipment ready. Here’s what you’ll need:

Ingredients

  • 1 bowl of cooked rice (preferably leftover rice as it’s drier and easier to stir-fry)
  • 2 eggs
  • 1/4 cup of peas
  • 1/4 cup of diced carrots
  • 1/4 cup of diced ham or Chinese sausage (lap cheong)
  • 1 small onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tablespoon of soy sauce
  • 1/2 teaspoon of salt (adjust to taste)
  • 1/4 teaspoon of white pepper (optional)
  • 2 tablespoons of vegetable oil
  • Chopped green onions for garnish

Equipment

  • A wok or large frying pan
  • Spatula or wooden spoon for stirring
  • Knife and cutting board
  • Cooking Steps

Step 1: Prepare the Rice

Rice Selection: Use leftover rice if possible, as it is drier and less sticky, making it easier to stir-fry. If using freshly cooked rice, spread it out on a plate to cool and dry slightly.

Step 2: Prepare the Ingredients

Vegetables and Meat: Dice the carrots, ham or Chinese sausage, and finely chop the onion. You can also use frozen peas, just make sure to thaw them before use.

Eggs: Beat the eggs in a small bowl until well mixed.

Step 3: Heat the Wok

Preheat: Place the wok or frying pan over medium-high heat and add 1 tablespoon of vegetable oil.

Heat the Oil: Allow the oil to heat up until it’s hot but not smoking.

Step 4: Cook the Eggs

Add Eggs: Pour the beaten eggs into the wok and quickly stir-fry with a spatula or wooden spoon, breaking up the eggs into small pieces as they cook.

Remove Eggs: Once the eggs are fully cooked, remove them from the wok and set them aside on a plate.

Step 5: Stir-Fry the Vegetables and Meat

Add More Oil: Add the remaining tablespoon of oil to the wok.

Sauté Onions and Garlic: Add the chopped onion and minced garlic to the wok and stir-fry until fragrant (about 30 seconds).

Add Vegetables and Meat: Add the diced carrots, peas, and ham or Chinese sausage to the wok. Stir-fry for about 2-3 minutes until the vegetables are tender and the meat is heated through.

Step 6: Combine with Rice

Add Rice: Push the ingredients to one side of the wok and add the cooked rice to the other side. Stir-fry the rice for a minute or two to heat it up.

Mix Ingredients: Gradually mix the rice with the vegetables and meat, stirring constantly to ensure everything is well combined.

Step 7: Season and Finish

Add Soy Sauce and Salt: Drizzle the soy sauce over the rice mixture and sprinkle with salt and white pepper (if using). Stir well to ensure the seasoning is evenly distributed.

Taste and Adjust: Taste the rice and adjust the seasoning as needed. If it’s too dry, you can add a splash of water and stir-fry for another minute.

Step 8: Garnish and Serve

Garnish: Sprinkle chopped green onions over the top of the fried rice for added flavor and color.
