How to Cook Easy Fried Rice

Cooking fried rice is a delightful way to transform leftover rice into a satisfying and delicious meal. Whether you’re looking for a quick lunch, a comforting dinner, or a way to use up ingredients in your fridge, fried rice is a versatile and economical choice. This article will guide you through the steps to make easy fried rice, highlighting various tips and variations to suit your taste preferences.

Ingredients

Before you start cooking, gather the following ingredients:

Rice: Ideally, use leftover rice, especially if it’s been refrigerated overnight. Cold rice is less sticky and easier to stir-fry.

Eggs: Typically, 2 eggs per person is a good ratio.

Vegetables: Common choices include carrots, peas, bell peppers, and onions. You can use fresh or frozen vegetables.

Protein: Options include shrimp, chicken, beef, pork, tofu, or bacon.

Oil: Any neutral-flavored oil, such as vegetable oil or canola oil, works well.

Sauces and Seasonings: Soy sauce, oyster sauce, sesame oil, salt, pepper, and garlic powder.

Aromatics: Garlic and ginger can add a nice flavor boost.

Garnishes: Green onions, chopped cilantro, or sesame seeds for serving.

Preparation

Prep the Ingredients

Dice the vegetables and protein into small, bite-sized pieces.

Beat the eggs in a bowl with a pinch of salt.

If using fresh vegetables, blanch them in boiling water for a couple of minutes until they are tender but still crisp. Drain and set aside.

Cook the Rice

If you don’t have leftover rice, cook fresh rice and let it cool completely before using.

Spread it out on a baking sheet to speed up the cooling process.

Refrigerated rice is ideal because it has less moisture and is easier to stir-fry, resulting in separate grains.

Cooking Steps

Heat the Pan

Place a large skillet or wok over medium-high heat.

Add a tablespoon of oil and let it heat up until it’s shimmering.

Cook the Aromatics

Add minced garlic and ginger (if using) to the hot oil. Stir-fry for about 30 seconds until fragrant.

Cook the Protein

  • If you’re using meat or seafood, add it to the pan now. Stir-fry until it’s browned and cooked through.
  • Remove the protein from the pan and set it aside. This prevents it from overcooking.

Cook the Vegetables

  • Add a bit more oil if needed.
  • Stir-fry the vegetables for a few minutes until they are tender and slightly caramelized.

Add the Rice

  • Push the vegetables to the side of the pan and add a bit more oil if necessary.
  • Add the cold rice to the pan, breaking it up with your hands or a spatula to ensure there are no clumps.
  • Stir-fry the rice for about 3-5 minutes, stirring constantly to prevent sticking and to heat the rice evenly.

Add the Eggs

  • Push the rice to one side of the pan and pour the beaten eggs into the empty space.
  • Scramble the eggs lightly, then mix them into the rice. Alternatively, you can cook the eggs separately, scramble them, and then fold them into the rice.

Season and Mix

  • Drizzle soy sauce over the rice, starting with a couple of tablespoons. Add more to taste.
  • If using, add a teaspoon of oyster sauce for added flavor.
  • Stir in the cooked protein and mix everything together until well combined.
  • Taste and adjust the seasoning with salt, pepper, and a drizzle of sesame oil.

Garnish and Serve

  • Remove the fried rice from the heat.
  • Garnish with chopped green onions, cilantro, or sesame seeds.
  • Serve immediately while hot.

Tips for Perfect Fried Rice

Use Cold Rice: Cold, leftover rice is key to achieving separate grains. Freshly cooked rice is too moist and sticky.

Non-stick Pan: A large non-stick skillet or wok makes it easier to stir-fry the rice without it sticking to the pan.

High Heat: Cooking over medium-high heat ensures the rice gets a nice, toasty flavor without becoming soggy.

Don’t Overcrowd the Pan: If your pan is too crowded, the rice will steam instead of stir-fry. Work in batches if necessary.

Stir Constantly: Stirring constantly prevents the rice from sticking to the pan and ensures even cooking.
