How to Make a Unicorn Cake

Making a unicorn cake can be a fun and creative project. The magical design and bright colors are sure to impress. Whether you are preparing for a birthday party, a celebration, or simply want to try something new, a unicorn cake is a great choice. This article will guide you through the process of making a unicorn cake from scratch, with detailed instructions on how to assemble, decorate, and create the magical look.

Ingredients You Will Need

To create your unicorn cake, you will need a variety of ingredients. These ingredients will be used for both the cake itself and the decorations. Here is a detailed list:

For the Cake:

  • 2 ½ cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter (at room temperature)
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup whole milk
  • 1 tablespoon rainbow sprinkles (optional)

For the Buttercream Frosting:

  • 2 cups unsalted butter (at room temperature)
  • 4 cups powdered sugar
  • 2 teaspoons vanilla extract
  • 2-4 tablespoons heavy cream or milk
  • Food coloring (pink, purple, blue, yellow)
  • Rainbow sprinkles (for decoration)
  • Edible glitter (optional)
  • Piping bags and tips

For the Unicorn Horn:

  • 1 package of fondant (white)
  • 1 tablespoon golden edible glitter (optional)
  • 1 small cone-shaped piece of edible sugar or wafer (for the horn base)

Step-by-Step Instructions

Step 1: Prepare the Cake Layers

Start by preparing the cake. Preheat your oven to 350°F (175°C) and grease and flour two 8-inch round cake pans. This will help the cake come out easily after baking.

In a medium-sized bowl, sift together the all-purpose flour, baking powder, and salt. This ensures that there are no lumps in your dry ingredients and that the cake will be light and fluffy.

In a large mixing bowl, beat the softened butter and granulated sugar together using an electric mixer until it becomes light and fluffy. This may take around 3-5 minutes. It is important to make sure this mixture is smooth and creamy.

Next, add the eggs, one at a time, to the butter and sugar mixture. Mix well after each addition. Once all the eggs are added, add the vanilla extract and mix again.

Gradually add the dry ingredients to the wet ingredients in small batches, alternating with the milk. Begin and end with the dry ingredients. Mix everything together until smooth. You can also add a tablespoon of rainbow sprinkles into the batter to add a fun surprise inside the cake.

Divide the batter evenly between the two prepared cake pans. Tap the pans gently on the counter to remove any air bubbles.

Bake the cakes in the preheated oven for about 25-30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Once baked, allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

Step 2: Make the Buttercream Frosting

While the cakes are cooling, you can start making the buttercream frosting. In a large mixing bowl, beat the softened butter using an electric mixer on medium speed until it is smooth and creamy.

Gradually add the powdered sugar, about ½ cup at a time, until the frosting starts to thicken. Once all the powdered sugar has been added, mix in the vanilla extract. If the frosting is too thick, add a tablespoon of heavy cream or milk at a time until you reach your desired consistency. The frosting should be smooth and spreadable but not too runny.

Once the base buttercream is ready, divide the frosting into separate bowls. You will need four bowls, one for each of the main colors of the unicorn: pink, purple, blue, and yellow.

Add a few drops of food coloring to each bowl. Mix until the colors are well incorporated. The colors should be bright and vibrant.

Step 3: Assemble the Unicorn Cake

Once your cakes are fully cooled, it’s time to start assembling the unicorn cake. Begin by leveling the tops of the cake layers using a serrated knife or cake leveler to ensure that your cakes are even. This will help your cake stack properly.

Place the first cake layer on a cake board or serving plate. Spread a layer of buttercream frosting on top of the cake using a spatula. Make sure it’s evenly distributed.

Place the second cake layer on top of the frosting. Gently press down to make sure it’s level.

Now, apply a thin crumb coat of buttercream to the entire cake. A crumb coat is a light layer of frosting that helps to seal in any loose crumbs and make the final layer of frosting smooth. After applying the crumb coat, place the cake in the refrigerator for 15-20 minutes to set.

Once the crumb coat is set, apply a thicker layer of buttercream to the entire cake. This will be the final smooth layer of frosting. You can use an offset spatula to smooth out the frosting and create a clean, even surface.

Step 4: Decorate the Unicorn Cake

Now comes the fun part—decorating the unicorn cake! You’ll use your colored buttercream to create the magical unicorn look.

Using a piping bag with a star tip, pipe the colored buttercream onto the top of the cake in small swirls. Alternate between pink, purple, blue, and yellow to create a rainbow effect. You can also pipe some swirls around the sides of the cake if desired.

For the unicorn horn, roll the white fondant into a cone shape. Use your fingers to shape the fondant into a point at the top and a wider base at the bottom. If you want a sparkly horn, brush the fondant with a bit of golden edible glitter to give it a magical shimmer.

Place the fondant horn gently in the center of the cake. You can also add a small piece of edible sugar cone at the base to give the horn a sturdy foundation.

For the unicorn ears, take two small pieces of fondant and shape them into triangles. Use a small amount of water to attach the ears to the top of the cake near the horn.

To finish off the decoration, pipe a few more swirls of the colored frosting along the bottom edge of the cake. You can also add edible glitter or rainbow sprinkles on top for extra sparkle.

Step 5: Final Touches

Once your unicorn cake is fully decorated, take a moment to admire your work. If you want, you can place a few more sprinkles around the base of the cake or along the sides to add a bit more magic. Allow the cake to set for about 30 minutes to let the frosting firm up a little.
