How to Cook Chinese Chicken Wings

Asian chicken wings are a delicious and flavorful dish that combines tender chicken wings with savory, sweet, and tangy ingredients. The unique blend of spices and seasonings makes this dish perfect for any occasion, whether it’s a family dinner, a party appetizer, or a snack during a game night. In this guide, we’ll walk you through the process of making Asian chicken wings from start to finish, offering tips on seasoning, marinating, cooking, and serving.

Ingredients for Asian Chicken Wings

Before we dive into the cooking process, let’s first take a look at the ingredients you’ll need to make these flavorful Asian chicken wings.

  • 2 pounds of chicken wings
  • 3 tablespoons soy sauce (for the marinade)
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sriracha sauce (for a little heat)
  • 1 tablespoon oyster sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon cornstarch (optional, for a crispy coating)
  • 1 tablespoon sesame seeds (for garnish)
  • Green onions (scallions), chopped (for garnish)

Choosing the Right Chicken Wings

The first step in making Asian chicken wings is selecting the right chicken wings. You can use whole wings, which can be separated into flats and drumettes, or you can buy pre-separated drumettes and flats. Both options will work well for this recipe, but buying pre-separated wings can save you some time.

If you’re feeling adventurous and want to make the wings extra crispy, you can toss the chicken in a bit of cornstarch before cooking. This adds a light, crispy coating to the wings, enhancing the texture and flavor.

Making the Marinade

One of the keys to great Asian chicken wings is the marinade. The marinade is what infuses the wings with deep flavor, so it’s important to take your time with this step.

  1. In a medium-sized bowl, combine soy sauce, hoisin sauce, rice vinegar, honey, sesame oil, sriracha sauce, oyster sauce, brown sugar, garlic, and ginger.
  2. Stir everything together until the sugar is dissolved, and the mixture is well-combined.
  3. Taste the marinade. If you want more sweetness, add a little extra honey. If you prefer more heat, increase the sriracha sauce. Adjust the balance to your liking.

The marinade is full of umami, sweetness, heat, and acidity, which gives the wings their signature flavor.

Marinating the Chicken Wings

Once you have your marinade prepared, it’s time to marinate the chicken wings. This step is crucial for ensuring the wings absorb all of the delicious flavors from the sauce.

  1. Place the chicken wings in a large resealable plastic bag or a shallow dish.
  2. Pour the marinade over the chicken wings. Make sure the wings are fully coated in the marinade.
  3. Seal the bag or cover the dish with plastic wrap, and refrigerate for at least 30 minutes. For even better flavor, you can marinate the wings for up to 4 hours or overnight.

The longer you marinate the wings, the more flavorful they will be. However, be cautious not to marinate them for too long, as the acid in the marinade (from the vinegar) can break down the chicken and affect its texture.

Cooking the Asian Chicken Wings

There are a few different ways you can cook your marinated chicken wings, including baking, frying, or grilling. Here’s how to cook them using each method:

1. Baking the Wings

Baking is an easy and healthier way to cook Asian chicken wings, and it results in tender and juicy meat.

  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
  3. Arrange the chicken wings in a single layer on the baking sheet. If you’d like extra crispy wings, sprinkle a little cornstarch on the wings before baking.
  4. Bake for 30-40 minutes, flipping the wings halfway through. Bake until the wings are golden brown and crispy.

2. Frying the Wings

Frying the wings gives them a crispy, crunchy exterior and juicy interior. This method is perfect if you’re craving the texture of deep-fried chicken.

  1. Heat vegetable oil in a deep fryer or a large pot over medium-high heat. You’ll need enough oil to submerge the chicken wings.
  2. Once the oil reaches 350°F (175°C), carefully add the marinated chicken wings, a few at a time, to the hot oil. Fry them for about 8-10 minutes, or until they are golden brown and crispy.
  3. Use a slotted spoon to remove the wings from the oil and place them on a paper towel-lined plate to drain any excess oil.

3. Grilling the Wings

Grilling adds a smoky flavor to your chicken wings, making them perfect for summer barbecues or outdoor cooking.

  1. Preheat your grill to medium heat.
  2. Place the marinated wings on the grill, turning them every 5 minutes to ensure they cook evenly.
  3. Grill the wings for 20-25 minutes, or until they are fully cooked and slightly charred on the outside.

Grilling gives the wings a delicious smoky taste while still allowing the marinade’s flavors to shine through.

Coating the Wings with Sauce

Once your chicken wings are cooked, it’s time to coat them with the sauce. If you want extra flavor, you can heat the remaining marinade and use it as a glaze.

  1. Pour the remaining marinade into a small saucepan. Heat it over medium heat until it starts to simmer, then lower the heat and cook for 5-7 minutes until it thickens slightly.
  2. Toss the cooked chicken wings in the thickened sauce until they are fully coated.

If you want your wings to be extra glossy, you can add a bit of honey or sesame oil to the sauce for a shiny finish.

Garnishing the Wings

For the final touch, you can garnish your Asian chicken wings with sesame seeds and chopped green onions. This not only adds color but also enhances the flavor and texture.

  1. Sprinkle the wings with sesame seeds for a nutty crunch.
  2. Top with freshly chopped green onions for a burst of freshness and color.

Serving Your Asian Chicken Wings

Asian chicken wings are perfect as an appetizer, snack, or main course. They can be served with a variety of dipping sauces like sweet chili sauce, soy sauce, or even ranch dressing for a twist. Here are a few serving suggestions:

  • Serve the wings on a large platter with a side of pickled vegetables or steamed rice for a complete meal.
  • Pair the wings with a light cucumber salad to balance out the richness of the dish.
  • You can also serve them with a cold beer or a glass of iced tea to complement the flavors.

Tips for Perfect Asian Chicken Wings

Marinate Longer for More Flavor: If possible, marinate your wings overnight. This gives the flavors more time to soak in, resulting in a deeper, richer taste.

Crisp Up Your Wings: For extra crispy wings, coat them in a thin layer of cornstarch before cooking. This gives the wings a crunchy exterior.

Adjust the Heat: If you like your wings spicier, increase the amount of sriracha or chili paste in the marinade. If you prefer a milder flavor, reduce the heat by using less sriracha.

Double the Sauce: If you love saucy wings, feel free to double the sauce ingredients so you have extra to coat the wings after cooking.

Conclusion

Making Asian chicken wings at home is simple, rewarding, and allows you to customize the flavors to your liking. With the perfect balance of sweet, savory, and spicy elements, these wings will be a hit at any gathering. Whether you choose to bake, fry, or grill them, you can enjoy crispy, tender chicken wings bursting with flavor. So, grab your ingredients and get started on your journey to making the best Asian chicken wings!
