How to Cook Chinese Chicken Thighs?

Chinese cuisine offers a rich variety of flavors, from sweet and sour to spicy and savory. One dish that stands out among the many is Chinese-style chicken thighs. Chicken thighs are a favorite in Chinese kitchens because of their juicy, tender meat, which soaks up the flavors of the sauce beautifully. Whether you are cooking at home or planning to impress your guests with something new, cooking Chinese chicken thighs is a rewarding experience that will fill your home with delicious aromas.

In this article, we will explore how to cook Chinese chicken thighs in a variety of ways. From the classic stir-fry to braised chicken, we’ll break down the ingredients and steps required to make a flavorful dish that is easy to prepare.

Ingredients Needed

Before you start cooking, it’s important to gather all the necessary ingredients. Chinese cooking often uses a combination of savory, salty, and sweet flavors, so the ingredients reflect this. Here’s a list of what you will need to cook Chinese chicken thighs.

Fresh Ingredients

  • Chicken Thighs (skinless and boneless for quicker cooking, or bone-in for more flavor)
  • Garlic (2-3 cloves, minced)
  • Ginger (1-inch piece, minced)
  • Spring onions (2-3, chopped)
  • Red bell pepper (1, sliced thinly)
  • Carrot (1, thinly sliced)
  • Chinese mushrooms (shiitake or wood ear, optional)
  • Coriander leaves (optional, for garnish)

Sauces and Seasonings

  • Soy Sauce (dark and light, for depth of flavor)
  • Oyster Sauce (adds a rich umami flavor)
  • Rice Vinegar (for tanginess)
  • Sesame Oil (for a fragrant, nutty aroma)
  • Sugar (a small amount to balance the savory flavors)
  • Cornstarch (used for thickening sauces)
  • Five-Spice Powder (optional, but adds complexity to the flavor)
  • Chili Paste or Chili Oil (if you like a spicy kick)

Optional Additions

  • Bamboo shoots (for texture)
  • Cashew nuts (for added crunch)
  • Bell peppers (for color and flavor)
  • Once you have all the ingredients in place, you are ready to start cooking!

Method 1: Stir-fried Chinese Chicken Thighs

Stir-frying is one of the most common cooking techniques in Chinese cuisine. It’s quick, easy, and allows you to preserve the flavors and textures of the ingredients.

Step 1: Marinate the Chicken Thighs

Start by marinating the chicken thighs. This step is important to infuse flavor into the meat. Cut the chicken into bite-sized pieces if using boneless chicken thighs, or leave them whole if you prefer bone-in pieces.

For the marinade:

  • 2 tbsp soy sauce (light)
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tsp cornstarch (this helps the chicken stay tender)
  • 1 tsp sugar
  • 1 tsp grated ginger
  • 1 clove garlic, minced

Combine all the ingredients in a bowl and toss the chicken pieces in the marinade. Let it sit for at least 15 minutes, or up to 30 minutes for better flavor.

Step 2: Prepare the Stir-fry Sauce

While the chicken is marinating, prepare the stir-fry sauce. In a separate bowl, mix:

  • 2 tbsp soy sauce (dark)
  • 1 tbsp oyster sauce
  • 1 tsp chili paste (optional)
  • 1 tsp sugar
  • 1 tbsp rice vinegar
  • 1 tbsp water
  • Mix well and set aside.

Step 3: Stir-fry the Chicken

Heat a wok or large frying pan over medium-high heat. Add 1-2 tbsp of vegetable oil (canola or peanut oil works best for stir-frying). Once the oil is hot, add the marinated chicken thighs. Stir-fry for about 5-7 minutes until the chicken is browned and cooked through.

Step 4: Add Vegetables

Add your choice of vegetables, such as bell peppers, carrots, and mushrooms. Stir-fry for another 2-3 minutes, allowing the vegetables to soften but remain crisp.

Step 5: Add the Sauce

Pour the prepared stir-fry sauce into the pan and stir to coat the chicken and vegetables evenly. Let it cook for another 2-3 minutes to allow the sauce to thicken. If you’d like a thicker sauce, dissolve an extra 1 tsp of cornstarch in water and add it to the sauce.

Step 6: Garnish and Serve

Once everything is well-coated in the sauce and the vegetables are tender, transfer the stir-fry to a serving dish. Garnish with chopped spring onions and coriander leaves. Serve with steamed rice or noodles for a complete meal.

Method 2: Braised Chinese Chicken Thighs

Braised dishes are a staple in Chinese cooking, as the slow cooking process infuses the chicken with deep, rich flavors.

Step 1: Prepare the Ingredients

Start by cutting the chicken thighs into large pieces (if you are using bone-in thighs).

Step 2: Sear the Chicken

In a large pot or Dutch oven, heat some vegetable oil over medium-high heat. Add the chicken thighs and sear on both sides for about 5 minutes until browned. This step adds flavor and texture to the chicken.

Step 3: Add Aromatics

Once the chicken is browned, remove it from the pot and set it aside. In the same pot, add minced garlic and ginger, and sauté for about 1-2 minutes until fragrant.

Step 4: Add Braising Liquids

Now it’s time to add the braising liquids. Pour in:

  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 2 cups chicken broth or water
  • Bring the mixture to a simmer.

Step 5: Braise the Chicken

Return the chicken thighs to the pot. Cover and let the chicken braise in the liquid over low heat for about 30 minutes to 1 hour, depending on the size of the chicken pieces. The chicken should be tender and fully cooked by the end.

Step 6: Final Seasoning

Once the chicken is cooked, taste the sauce and adjust the seasoning. Add more soy sauce for saltiness, or a pinch of sugar for sweetness, if needed. If you like a thicker sauce, dissolve 1 tsp of cornstarch in a little water and stir it into the sauce to thicken it.

Step 7: Serve

Once the chicken is tender and the sauce is rich and flavorful, transfer the dish to a serving platter. Garnish with chopped spring onions or cilantro. Serve with steamed rice or noodles.

Method 3: Chinese Chicken Thighs in Sweet and Sour Sauce

Sweet and sour chicken is a favorite dish in Chinese cuisine, and it pairs perfectly with the richness of chicken thighs. This dish is balanced with tangy vinegar, sweet pineapple, and savory soy sauce.

Step 1: Marinate the Chicken

As in the other methods, start by marinating the chicken thighs. Use the same marinade as described in Method 1.

Step 2: Prepare the Sweet and Sour Sauce

In a bowl, mix the following ingredients:

  • 3 tbsp rice vinegar
  • 4 tbsp ketchup
  • 2 tbsp soy sauce
  • 3 tbsp sugar
  • 1 tbsp cornstarch
  • 1/2 cup water
  • Mix well until the sugar dissolves.

Step 3: Cook the Chicken

Heat oil in a pan over medium-high heat. Add the marinated chicken thighs and cook until golden brown and crispy. This should take about 5-7 minutes on each side. Remove the chicken from the pan and set aside.

Step 4: Prepare the Sweet and Sour Sauce

In the same pan, add the sweet and sour sauce ingredients. Stir and cook for about 2 minutes until it begins to thicken.

Step 5: Combine Chicken and Sauce

Add the cooked chicken thighs back into the pan and toss them in the sauce, coating them evenly. Add pineapple chunks or bell peppers for extra flavor and color. Stir to combine and cook for another 2-3 minutes.

Step 6: Serve

Serve your sweet and sour chicken thighs with steamed rice or noodles, and garnish with some sesame seeds and spring onions.

Conclusion

Chinese chicken thighs are incredibly versatile and can be made in several ways to suit different tastes. Whether you prefer the quick stir-fry, the slow-cooked braised style, or the tangy sweet and sour flavor, chicken thighs can easily be transformed into a delicious Chinese dish. Each method brings out different flavors and textures, so feel free to experiment and find the one that best suits your preferences.

With these easy-to-follow methods and ingredients, cooking Chinese chicken thighs at home is simple, and the results are sure to impress. Enjoy your cooking adventure and delight in the savory goodness of homemade Chinese chicken thighs!
