  • Take 4 cups of full-fat milk and pour it into a heavy-bottomed pan. A heavy-bottomed pan is essential because it helps prevent the milk from burning or sticking to the bottom.
  • Heat the milk on medium heat, stirring occasionally to ensure it doesn’t stick to the bottom of the pan. Let the milk come to a gentle boil.
  • Once the milk starts to boil, lower the heat and let it simmer gently for about 5-7 minutes. You want to reduce the milk slightly to make it thicker.

Once the milk is simmering, it’s time to add the rice paste.

  • Slowly add the ground rice paste into the simmering milk while continuously stirring to avoid lumps.
  • Continue stirring the mixture constantly to ensure the rice paste gets incorporated evenly into the milk.
  • Cook the mixture on low heat for about 15-20 minutes, stirring frequently to prevent it from sticking to the pan. The rice will gradually cook, and the mixture will thicken to a pudding-like consistency.

Step 5: Add Sugar and Flavorings

Once the rice has cooked and the milk has thickened, it’s time to sweeten and flavor your phirni.

  • Add 1/2 cup of sugar to the mixture and stir until the sugar dissolves completely.
  • Add 1/4 teaspoon of ground cardamom powder for flavor. If you like, you can also add a few strands of saffron soaked in warm milk for a rich color and fragrance.
