How to Cook Chicken Wings Chinese Style

Chinese chicken wings are a delicious and popular dish that can be enjoyed as an appetizer or a main course. They are flavorful, crispy, and perfect for any occasion. This article will guide you through the process of making Chinese chicken wings at home, with detailed steps and helpful tips.

Ingredients Needed

To make Chinese chicken wings, you will need the following ingredients:

For the Marinade:

  • Chicken Wings: 2 pounds (about 1 kg)
  • Soy Sauce: 1/2 cup
  • Hoisin Sauce: 1/4 cup
  • Rice Wine or Cooking Wine: 2 tablespoons

  • Brown Sugar: 2 tablespoons

  • Cornstarch: 1/2 cup (for extra crispiness)

For Garnish:

  • Green Onions: 2, chopped
  • Sesame Seeds: 1 tablespoon

Preparation Steps

1. Preparing the Chicken Wings

Start by cleaning the chicken wings. Rinse them under cold water and pat them dry with paper towels. This helps remove any excess moisture, which is essential for achieving a crispy texture.

2. Marinating the Chicken Wings

In a large bowl, combine the marinade ingredients. Mix the soy sauce, hoisin sauce, rice wine, minced garlic, minced ginger, brown sugar, sesame oil, black pepper, five spice powder, and chili flakes (if using).

Add the cleaned chicken wings to the bowl. Make sure each wing is well-coated with the marinade. Cover the bowl with plastic wrap and refrigerate. Let the wings marinate for at least 2 hours, but ideally overnight for maximum flavor.

3. Prepping for Cooking

  3. Arrange the Wings: Place the marinated chicken wings on the wire rack in a single layer. Make sure they are not touching each other.
  4. Bake the Wings: Bake the wings in the preheated oven for about 40-45 minutes. Flip them halfway through for even cooking. They should be golden brown and crispy when done.
  5. Broil for Extra Crispiness: If you want extra crispiness, turn on the broiler for the last 5 minutes. Keep a close eye on them to avoid burning.

B. Frying

  1. Heat the Oil: In a large, deep pan or a deep fryer, heat vegetable oil to 350°F (175°C).
  2. Fry the Wings: Carefully add the chicken wings to the hot oil in batches. Do not overcrowd the pan. Fry for about 8-10 minutes, or until they are golden brown and cooked through.
  3. Drain the Wings: Remove the wings with a slotted spoon and let them drain on paper towels to absorb excess oil.

C. Grilling

  1. Preheat the Grill: Preheat your grill to medium-high heat.
  2. Grill the Wings: Place the marinated wings on the grill. Cook for about 15-20 minutes, turning occasionally, until the wings are cooked through and have nice grill marks.
  3. Baste with Marinade: For added flavor, brush the wings with the remaining marinade during the last few minutes of grilling.
