What Is the Recipe for Squirrel Mandarin Fish

Squirrel Mandarin Fish, also known as Sweet and Sour Mandarin Fish, is a renowned dish hailing from Jiangsu Province in China. It is a quintessential part of Su cuisine, which is renowned for its delicate flavors and intricate cooking techniques. Mandarin Fish (or Substitute): One whole mandarin fish (preferably around 1.5 kg) or substitute with a similar-sized fish like carp or grass carp.

Note: Mandarin fish (or guiyu in Chinese) refers specifically to the Siniperca chuatsi species, known for its firm texture and delicious taste. However, it can be challenging to find, so similar fish can be used.

  • 1 tablespoon of light soy sauce
  • 1 teaspoon of white pepper powder
  • 1 teaspoon of salt
  • 1 tablespoon of grated ginger
  • 2 cloves of garlic, finely chopped

Batter:

  • 2 egg yolks
  • 1/4 cup of cornstarch
  • 1/4 cup of all-purpose flour
  • A little water (to adjust the consistency)

Sauce:

  • 1/2 cup of ketchup
  • 2 tablespoons of white vinegar
  • 2 tablespoons of sugar
  • 1 tablespoon of water starch
  • 1/4 cup of water
  • Salt to taste

Garnish:

  • Pine nuts (or cashews)
  • Blanched peas
  • Fresh coriander leaves (optional)

Other Ingredients: Vegetable oil for frying

Preparation

Cleaning and Preparation of Fish

Step 1: Begin by cleaning the fish thoroughly. Scale the fish, remove the gills and internal organs, and wash it under running water. Pat it dry using paper towels.

Step 2: Make diagonal cuts on both sides of the fish, about 1 cm deep and 2 cm apart. This will help the sauce penetrate the fish and make it look like a squirrel’s fur when cooked.

Step 3: Remove the backbone and ribs of the fish carefully, ensuring the fish remains intact. This requires a sharp knife and steady hands.
Marinating the Fish

Step 4: In a bowl, mix the marinade ingredients (cooking wine, light soy sauce, white pepper powder, salt, grated ginger, and finely chopped garlic).

Step 6: In another bowl, whisk together the egg yolks, cornstarch, and all-purpose flour. Gradually add water, a little at a time, until the batter reaches a thick, pouring consistency. This batter should coat the fish evenly without being too runny.

Step 9: Heat vegetable oil in a deep frying pan or wok until it reaches around 180°C (350°F). Use a thermometer to check the oil temperature accurately.

Step 10: Carefully lower the coated fish into the hot oil, holding it by the tail to shape it like a squirrel’s head and tail. Fry until golden brown and crispy, about 3-4 minutes on each side. Use a slotted spoon to drain excess oil.
