How to Make Stinky Tofu

Sticky tofu, a delightful fusion of sweet and savory flavors, is a popular dish in many Asian cuisines. Its unique texture and rich taste make it a perfect choice for both casual meals and special occasions. In this article, we’ll guide you through the step-by-step process of making sticky tofu, highlighting key tips and tricks to ensure your dish turns out perfectly.

Ingredients Preparation

Before diving into the cooking process, let’s gather all the necessary ingredients:

Tofu: Choose firm or extra-firm tofu for the best texture. It holds its shape well during cooking.

Sugar: Granulated sugar or brown sugar can be used. Brown sugar adds a slight caramel flavor.

Soy Sauce: Dark soy sauce for color and flavor, and light soy sauce for seasoning.

Honey: Adds a natural sweetness and a glossy finish.

Sesame Oil: Enhances the aroma and flavor.

Garlic: Minced garlic for a savory touch.

Ginger: Minced ginger for a fresh, slightly spicy flavor.

Green Onions: Chopped for garnish.

Cornstarch: For thickening the sauce.

Vegetable Oil: For frying the tofu.

Water: To adjust the sauce consistency.

Sesame Seeds: For garnish.

Preparing the Tofu

Pressing the Tofu: Start by pressing the tofu to remove excess water. Wrap the tofu block in a clean kitchen towel or paper towels and place it on a plate. Place a heavy object, such as a cast-iron skillet or a few cans, on top of the tofu. Let it sit for about 15-20 minutes to press out the water.

Cutting the Tofu: Once pressed, cut the tofu into bite-sized cubes. Aim for uniform sizes to ensure even cooking.

Cooking the Tofu

Heating the Oil: Pour enough vegetable oil into a frying pan or wok to cover the bottom by about 1/4 inch. Heat the oil over medium-high heat until it’s hot but not smoking.

Frying the Tofu: Carefully place the tofu cubes in the hot oil. Fry them in batches to avoid overcrowding the pan. Fry until golden brown and crispy on all sides, turning occasionally with tongs or a spatula. This should take about 3-4 minutes per batch.

Draining the Tofu: Once fried, transfer the tofu cubes to a paper towel-lined plate to drain excess oil.

Making the Sticky Sauce

Preparing the Sauce Base: In a medium saucepan, combine sugar, dark soy sauce, light soy sauce, honey, sesame oil, minced garlic, and minced ginger. Add enough water to reach your desired sauce consistency. Start with about 1/4 cup of water and adjust as needed.

Simmering the Sauce: Place the saucepan over medium heat and stir until the sugar is fully dissolved. Bring the sauce to a simmer and let it cook for about 5 minutes, stirring occasionally. This allows the flavors to meld together.

Thickening the Sauce: In a small bowl, mix cornstarch with a little water to form a slurry. Add the slurry to the simmering sauce, stirring constantly, until the sauce thickens to your liking. Be careful not to over-thicken it, as it should still be pourable.

Combining Tofu and Sauce

Adding the Tofu: Once the sauce has reached the desired consistency, gently add the fried tofu cubes to the saucepan. Stir gently to coat each piece of tofu evenly with the sauce. Let the tofu simmer in the sauce for about 2-3 minutes to allow it to absorb some of the flavors.

Tasting and Adjusting: Taste the sauce and adjust the seasoning with more soy sauce, sugar, or honey if needed. Remember, the sauce should be slightly sweeter and saltier than you prefer, as the tofu will absorb some of the flavors.

Serving the Sticky Tofu

Tips for Perfect Sticky Tofu

Pressing the Tofu: Pressing the tofu is crucial for achieving a crispy exterior. Skipping this step will result in soggy tofu.

Frying Temperature: Ensure the oil is hot enough before adding the tofu. This helps to create a crispy crust.

Sauce Consistency: The sauce should be thick but pourable. Adjust the cornstarch slurry and cooking time accordingly.
