How to Make Simple Home-Style Fish Flavoured Shredded Pork

Its unique blend of savory, sweet, and slightly spicy flavors makes it a favorite among meat lovers. This article will guide you through the process of making simple home-style fish-flavored shredded pork, ensuring you can recreate this delicious dish in your own kitchen with ease.

Understanding Fish-Flavored Shredded Pork

Fish-flavored shredded pork, also known as yu xiang rou si in Mandarin, is a classic Sichuan dish. Despite its name, no actual fish is used; instead, the dish gets its name from the fish-like fragrance created by a blend of soy sauce, vinegar, garlic, ginger, and chili peppers. The pork is shredded into thin strips, which allows it to absorb the flavors of the sauce perfectly.

Ingredients

Before starting, let’s gather all the necessary ingredients:

  • Pork shoulder or pork belly: About 300 grams, preferably with some fat for added flavor.
  • Garlic: 3-4 cloves, finely chopped.
  • Ginger: A small piece, finely chopped.
  • Green onions: 2-3 stalks, chopped into short lengths for garnish.
  • Soy sauce: 2 tablespoons, for seasoning.
  • Rice vinegar: 1 tablespoon, providing a tangy taste.
  • Sugar: 1 teaspoon, balancing the flavors.
  • Sesame oil: 1 teaspoon, adding a nutty aroma.
  • Red chili peppers: 2-3, finely chopped (adjust to taste).
  • Cornstarch: 1 tablespoon, mixed with 1 tablespoon of water to create a slurry.
  • Vegetable oil: For frying.
  • Salt: To taste.
  • White pepper: A pinch, for added depth.

Preparation

Preparing the Pork

Begin by slicing the pork into thin strips, about 3-4 inches long and 1/4 inch thick. This ensures the pork cooks evenly and absorbs the sauce well.

Place the sliced pork in a bowl and add 1 tablespoon of soy sauce, a pinch of salt, and a pinch of white pepper. Mix well and let it marinate for at least 15 minutes. This helps to season the pork and tenderize it slightly.

Cooking the Pork

Heat a large skillet or wok over medium-high heat and add enough vegetable oil the to coat bottom. Once the oil is hot, carefully add the marinated pork strips, spreading them out in a single layer.

Fry the pork for about 3-4 minutes on each side, or until it turns golden brown and slightly crispy. This step is crucial for developing the pork’s flavor and texture.

Remove the cooked pork from the skillet and set it aside on a plate lined with paper towels to drain any excess oil.

Making the Sauce

In the same skillet, leave about 1-2 tablespoons of oil. Reduce the heat to medium and add the chopped garlic and ginger. Stir-fry for about 30 seconds until fragrant.

Add the chopped red chili peppers and stir-fry for another 30 seconds. This releases their flavors and adds a bit of heat to the sauce.

Pour in the remaining 1 tablespoon of soy sauce, 1 tablespoon of rice vinegar, and 1 teaspoon of sugar. Stir well to combine and let the sauce simmer for about 1 minute, until it thickens slightly.

Combining Pork and Sauce

Return the cooked pork strips to the skillet, stirring gently to coat them evenly with the sauce. Cook for another 2-3 minutes, allowing the pork to absorb the flavors of the sauce.

To thicken the sauce further, add the cornstarch slurry, stirring quickly to prevent lumps. Cook for another minute until the sauce has thickened to your desired consistency.

Garnishing and Serving

Off the heat, drizzle in 1 teaspoon of sesame oil and stir well. This adds a nice nutty aroma to the dish.

Sprinkle the chopped green onions over the pork and stir gently to combine. The green onions add a fresh, crunchy texture and a burst of flavor.

Sauce Consistency: Adjust the sauce’s consistency to your liking. If you prefer a thicker sauce, use a bit more cornstarch slurry. For a thinner sauce, reduce the amount of cornstarch.
