How Do You Make Ice Cream Sandwich Cake

Creating an ice cream sandwich cake is a delightful and fun way to enjoy a refreshing treat. This dessert combines the creamy texture of ice cream with the crunchy delight of cookies, all layered together to form a scrumptious cake. Whether you’re hosting a summer party or just want to indulge in a special treat, an ice cream sandwich cake is a perfect choice. Let’s dive into the step-by-step process of making this delightful dessert.

Ingredients You’ll Need

For the Ice Cream Sandwiches:

  • 24 large chocolate sandwich cookies (such as Oreos)
  • 1 quart (4 cups) of your favorite ice cream flavor (vanilla, chocolate, strawberry, etc.)

For the Frosting:

  • 1 cup heavy whipping cream, chilled
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • Optional: food coloring, sprinkles, or other decorations

Tools and Equipment:

  • Offset spatula or knife
  • Parchment paper
  • Freezer-safe container or baking dish
  • Aluminum foil or plastic wrap
  • Electric mixer or whisk

Preparing the Ice Cream

Softening the Ice Cream: Start by removing the ice cream from the freezer and allowing it to soften slightly. This will make it easier to spread without breaking the cookies. You can let it sit at room temperature for about 10-15 minutes, or microwave it on low power for a few seconds if you’re in a rush. Just be careful not to melt it completely.

Choosing the Right Flavor: The sky’s the limit when it comes to choosing an ice cream flavor. Classic vanilla or chocolate are always safe bets, but you can also experiment with unique flavors like mint chocolate chip, cookie dough, or even seasonal flavors like pumpkin spice.

Making the Ice Cream Sandwiches

Assembling the Sandwiches: Place a large chocolate sandwich cookie on a flat surface. Using the offset spatula, scoop out a generous amount of softened ice cream and place it on top of the cookie. Aim for about a tablespoon of ice cream per sandwich, but adjust based on your preference for creaminess and cookie-to-ice cream ratio.

Topping with Another Cookie: Gently press another cookie onto the ice cream, sandwiching it together. Lightly press down to ensure the cookies adhere to the ice cream. Repeat this process until you have 12 ice cream sandwiches.

Freezing the Sandwiches: Place the assembled sandwiches on a baking sheet lined with parchment paper. Space them out to avoid sticking. Put the baking sheet in the freezer for at least 30 minutes to firm up the ice cream. This will make it easier to handle and layer them into the cake.

Building the Cake

Preparing the Container: Line a freezer-safe container or baking dish with parchment paper, allowing some overlap on the sides to easily lift out the cake later. This will help prevent sticking and make it easier to serve.

Layering the Sandwiches: Once the sandwiches are firm, start layering them in the prepared container. Place 6 sandwiches in the bottom layer, arranging them in a single layer. Try to create an even pattern for a neat appearance.

Adding a Layer of Ice Cream: Scoop out about half of the remaining ice cream and spread it evenly over the first layer of sandwiches. Use the offset spatula to smooth it out, ensuring there are no gaps.

Adding the Second Layer of Sandwiches: Place the remaining 6 sandwiches on top of the ice cream layer, again arranging them in a single layer. Press down gently to adhere the layers.

Freezing Again: Put the container back in the freezer for at least 1-2 hours to allow the cake to firm up. This will ensure that the layers are stable and ready for frosting.

Making the Frosting

Whipping the Cream: In a mixing bowl, add the chilled heavy whipping cream, powdered sugar, and vanilla extract. Use an electric mixer or whisk to beat the mixture until it forms stiff peaks. This will take about 2-3 minutes on medium-high speed.

Adding Color and Flavor: If you want to add some color or extra flavor to your frosting, you can gently fold in a few drops of food coloring or a sprinkle of ground cinnamon, cocoa powder, or nutmeg. Just be careful not to overmix, as this can cause the whipped cream to lose its stiffness.

Frosting the Cake

Removing the Cake from the Container: Once the cake is firm, lift it out of the container using the parchment paper overlaps. Place it on a serving dish or a flat surface lined with parchment paper.

Frosting the Top and Sides: Use the offset spatula to spread the whipped cream frosting evenly over the top and sides of the cake. Start with the top, adding a thick layer of frosting and smoothing it out. Then, move to the sides, ensuring the frosting covers the entire cake evenly.

Adding Decorations: Feel free to add sprinkles, chocolate chips, crushed cookies, or any other decorations to make your cake look extra festive. You can also drizzle some melted chocolate or caramel over the frosting for added flavor and texture.

Serving and Storing the Cake

Chilling Before Serving: Place the frosted cake back in the freezer for at least 30 minutes to allow the frosting to set. This will ensure that it holds its shape and looks great when you slice it.

Slicing and Serving: When you’re ready to serve, use a sharp knife to slice the cake into portions. It’s best to let the knife sit in hot water for a few seconds before each cut to ensure cleaner slices. Serve the cake immediately, as it will start to melt if left out for too long.

Storing Leftovers: If you have any leftovers, wrap the cake tightly in aluminum foil or plastic wrap and place it back in the freezer. It can be stored for up to a week. When you’re ready to eat it again, let it thaw for a few minutes before serving to ensure the best texture.

Conclusion

Making an ice cream sandwich cake is a fun and rewarding project that yields a delicious and impressive dessert. By following these simple steps, you can create a beautiful and tasty treat that will impress your friends and family. Whether you’re celebrating a special occasion or just looking for a refreshing summer dessert, an ice cream sandwich cake is a perfect choice. So gather your ingredients, roll up your sleeves, and start crafting your own delicious ice cream sandwich cake today!
