How to Cook Fish Curry Chinese Style

Fish curry is a beloved dish in many Chinese households, especially in coastal regions where fresh seafood is abundant. It combines the delicate flavor of fish with the aromatic spices typical of Chinese cuisine. In this article, I’ll guide you through the steps to make a delicious and authentic Chinese-style fish curry. We’ll cover everything from selecting the right fish to creating a flavorful curry sauce. Let’s dive in!

Ingredients

Before we start cooking, let’s gather all the necessary ingredients:

Fish: Choose a firm, white-fleshed fish such as seabass, snapper, or tilapia. About 1.5 pounds (700 grams) should be enough for 4 servings.

Vegetables: 1 medium onion, sliced; 2 cloves of garlic, minced; 1-inch piece of ginger, minced; 2 medium tomatoes, diced; 1 green chili, sliced (optional for heat).

Spices: 2 tablespoons of curry powder (preferably a blend with coriander, cumin, turmeric, and fenugreek); 1 teaspoon of ground turmeric (optional, for added color and flavor); 1 teaspoon of paprika (optional, for a bit of smokiness).

Aromatics: 2 tablespoons of vegetable oil; 1 teaspoon of mustard seeds; 2 sprigs of fresh cilantro, chopped (for garnish).

Liquids: 1 cup of coconut milk; 1/2 cup of water or fish stock.

Seasonings: Salt to taste; 1 teaspoon of sugar (optional, to balance flavors); juice of half a lemon.

Preparation

Now that we have all our ingredients, let’s prepare them:

Clean the Fish: Rinse the fish under cold running water to remove any scales, slime, or blood. Pat it dry with paper towels to prevent splattering when cooking.

Cut the Fish: Depending on the size of the fish, you can cut it into steaks or fillets. If using whole fish, make diagonal slashes on both sides to allow the curry flavors to penetrate.

Chop the Vegetables and Aromatics: Slice the onion, mince the garlic and ginger, dice the tomatoes, and slice the green chili if using.

Cooking Instructions

Let’s move on to the cooking process. Follow these steps carefully:

Heat the Oil: Place a large pan or wok over medium heat. Add the vegetable oil and let it heat up.

Temper the Mustard Seeds: Once the oil is hot, add the mustard seeds. They will start to pop and release their aroma. Be careful not to burn them.

Sauté the Aromatics: Add the sliced onion, minced garlic, and minced ginger to the pan. Sauté until the onion turns translucent and the aromatics are fragrant, about 3-4 minutes.

Add the Spices: Stir in the curry powder, ground turmeric (if using), and paprika (if using). Cook for another 1-2 minutes until the spices are fragrant.

Add Tomatoes and Chili: Incorporate the diced tomatoes and sliced green chili into the pan. Cook until the tomatoes soften and release their juices, about 5 minutes.

Add Coconut Milk and Water: Pour in the coconut milk and water or fish stock. Stir well to combine all the ingredients. Bring the mixture to a simmer.

Season the Curry: Add salt to taste and the sugar (if using) to balance the flavors. Let the curry simmer for about 10 minutes to allow the flavors to meld together.

Add the Fish: Gently place the fish pieces into the simmering curry. Make sure they are submerged in the sauce. Cook for about 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.

Finish with Lemon Juice: Remove the pan from heat. Stir in the lemon juice to brighten the flavors. Taste and adjust the seasoning if necessary.

Garnish and Serve: Ladle the fish curry into serving bowls. Garnish with chopped cilantro and serve hot with steamed rice, naan, or rotis.

Here are some tips to ensure your fish curry turns out perfectly:

Choose Fresh Fish: Always use fresh fish for the best flavor and texture.

Adjust the Spice Level: If you prefer a less spicy curry, reduce the number of green chilies or omit them altogether.

Don’t Overcook the Fish: Overcooking can make the fish mushy. Cook it just until it flakes easily with a fork.

Use Good Quality Coconut Milk: Good quality coconut milk adds richness and creaminess to the curry.

Balance the Flavors: Add a touch of sugar to balance the heat and acidity of the curry.
