How to Cook Chicken Chinese Style

Chinese cuisine is renowned worldwide for its diverse flavors, cooking techniques, and the art of balancing ingredients. Chicken, being a versatile and lean meat, is a staple in many Chinese dishes. From stir-fries to braises, grilled to stewed, there are countless ways to cook chicken with a Chinese twist. Here, we’ll explore some classic and delicious methods to cook chicken Chinese style.

Preparation Tips

Before diving into the recipes, let’s cover some essential preparation tips that will ensure your dishes turn out perfectly.

Choose the Right Chicken

Whole Chicken: Ideal for roasting or poaching.

Chicken Breasts: Best for stir-fries or grilling due to their low-fat content.

Chicken Thighs and Legs: Perfect for braising or slow cooking as they stay moist and flavorful.

Ground Chicken: Useful for making dumplings or stir-fries where the meat will be finely chopped.

Marinating

Marinating chicken enhances flavor and tenderizes the meat. Use a mixture of soy sauce, rice vinegar, garlic, ginger, and a touch of sugar or honey. Let it sit for at least 30 minutes, preferably an hour or more.

Slicing and Dicing

  • For stir-fries, slice chicken thinly against the grain to ensure quick cooking and tender bites.
  • For braises, you can cut the chicken into larger pieces to retain more moisture during slow cooking.

Cooking Oil

Use a high-heat oil like peanut, vegetable, or grapeseed oil for stir-fries and frying. These oils can handle high temperatures without smoking or becoming rancid.

Stir-Fried Chicken with Vegetables

Stir-fries are a quintessential Chinese cooking technique that combines rapid cooking over high heat with minimal oil. This method keeps vegetables crisp and chicken tender.

Ingredients

  • 2 boneless, skinless chicken breasts, sliced thin
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 medium carrot, sliced into thin matchsticks
  • 3 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for slurry)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • Optional: sesame seeds or chopped green onions for garnish

Instructions

Marinate: In a bowl, combine the sliced chicken with 1 tablespoon soy sauce, a pinch of salt, and pepper. Let it marinate for 15-20 minutes.

Heat Oil: In a wok or large skillet, heat the vegetable oil over high heat.

Cook Garlic and Ginger: Add the minced garlic and ginger. Stir-fry for about 30 seconds until fragrant.

Add Chicken: Add the marinated chicken and stir-fry until lightly browned and cooked through, about 3-4 minutes. Remove the chicken from the wok and set aside.

Vegetables: In the same wok, add the bell peppers, broccoli, and carrot. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

Combine: Return the chicken to the wok. Add the remaining soy sauce, oyster sauce, and stir to combine.

Thicken Sauce: Pour the cornstarch slurry into the wok and stir quickly to thicken the sauce. Cook for another minute until everything is well coated.

Serve: Transfer to a serving dish and garnish with sesame seeds or chopped green onions if desired.

Braised Chicken with Soy Sauce

Braising is a cooking method that involves simmering meat in a small amount of liquid in a covered pot until it becomes tender. This soy sauce braised chicken is flavorful and perfect for a hearty meal.

Ingredients

  • 1 whole chicken, cut into 8 pieces (or use chicken thighs and legs)
  • 4 slices fresh ginger
  • 4 green onions, tied into a knot
  • 1/4 cup soy sauce
  • 2 tablespoons Chinese rice wine or dry sherry
  • 2 tablespoons brown sugar
  • 2 star anise
  • 1 cinnamon stick
  • 3 cloves garlic, lightly crushed
  • 2 cups water or chicken broth
  • Salt to taste
  • Optional: steamed rice or noodles for serving

Instructions

Prepare Pot: In a heavy-bottomed pot or Dutch oven, arrange the ginger slices and green onion knot at the bottom.

Add Chicken: Place the chicken pieces on top.

Make Sauce: In a small bowl, mix the soy sauce, rice wine, brown sugar, and a pinch of salt. Pour over the chicken.

Aromatics: Add the star anise, cinnamon stick, and crushed garlic to the pot.

Cover and Simmer: Pour in the water or chicken broth. Bring to a boil, then reduce the heat to low. Cover and simmer for about 45 minutes to 1 hour, or until the chicken is tender and cooked through.

Adjust Seasoning: Taste the braising liquid and adjust the seasoning with more soy sauce or sugar if needed.

Serve: Remove the aromatics (star anise, cinnamon stick, garlic) before serving. Serve the braised chicken hot, with steamed rice or noodles on the side.

Grilled Lemon Herb Chicken

Grilling chicken gives it a smoky flavor and a delightful char. This lemon herb chicken is simple yet bursting with flavor.

Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • Zest and juice of 2 lemons
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • Salt and pepper to taste

Instructions

Marinate: In a large bowl, combine lemon zest, lemon juice, olive oil, minced garlic, rosemary, thyme, salt, and pepper. Add the chicken pieces and toss to coat evenly. Let it marinate for at least 30 minutes, preferably an hour.

Preheat Grill: Preheat your grill to medium-high heat. Oil the grill grates to prevent sticking.

Grill Chicken: Place the chicken pieces on the grill. Grill for about 6-7 minutes per side, or until the chicken is cooked through and has a nice char.
