Cook the pork: Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the minced pork and stir-fry until browned and crispy, about 5 minutes. Add the minced garlic and continue to stir-fry until fragrant.

Season the pork: Add the dark soy sauce, light soy sauce, fermented black bean paste (if using), and sugar to the pork. Stir well to combine and cook for another 2 minutes.

Stir-fry the eggplant: Add the remaining tablespoon of oil to the wok. Add the eggplant pieces in a single layer and stir-fry until they are tender and slightly browned, about 5-7 minutes. Be sure to stir frequently to prevent sticking.

  • 2 tablespoons vegetable oil

  • 2 tablespoons olive oil
