How to Cook Chinese Egg Plant

Chinese eggplant, also known as aubergine or brinjal, is a versatile vegetable that can be prepared in numerous ways. Its creamy texture and unique flavor make it a favorite in many Chinese dishes. Preparation Tips

Before diving into the recipes, here are some useful tips for preparing Chinese eggplant:

Selection: Choose firm, glossy eggplants with no bruises or soft spots. The skin should be smooth and shiny.

Washing: Rinse the eggplants under cold running water to remove any dirt or residue. Pat them dry using a clean kitchen towel.

Cutting: Depending on the recipe, you may need to slice, dice, or chop the eggplant into uniform pieces. This ensures even cooking.

Prepare the eggplant: Slice the eggplants into 1/2-inch rounds or diagonal pieces. Soak them in salted water for 10 minutes, then drain well.

Cook the pork: Heat 1 tablespoon of oil in a wok or large skillet over medium-high heat. Add the minced pork and stir-fry until browned and crispy, about 5 minutes. Add the minced garlic and continue to stir-fry until fragrant.

Season the pork: Add the dark soy sauce, light soy sauce, fermented black bean paste (if using), and sugar to the pork. Stir well to combine and cook for another 2 minutes.

Stir-fry the eggplant: Add the remaining tablespoon of oil to the wok. Add the eggplant pieces in a single layer and stir-fry until they are tender and slightly browned, about 5-7 minutes. Be sure to stir frequently to prevent sticking.

Combine and cook: Add the cooked pork and its juices back into the wok with the eggplant. Stir to combine and cook for another 2-3 minutes until everything is heated through and well blended.

Braised Chinese Eggplant with Garlic Sauce

Braising is another excellent method for cooking Chinese eggplant, especially if you prefer a softer texture with a rich, garlic-infused sauce.

  • 4 medium Chinese eggplants
  • 4 cloves garlic, minced
  • 2 tablespoons vegetable oil
  • 1 tablespoon light soy sauce
  • 1 tablespoon Chinese rice vinegar or white vinegar
  • 1 teaspoon sugar
  • 1/2 cup water or chicken broth
  • Salt, to taste

  • 4 medium Chinese eggplants
  • 2 tablespoons olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Spicy Garlic Sauce
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 2 tablespoons soy sauce
