1/2 teaspoon salt
1/2 cup (1 stick) unsalted butter, cold and cut into small cubes
3-4 tablespoons ice water

Instructions:

Gradually add ice water, one tablespoon at a time, pulsing until the dough begins to come together. Be careful not to overmix; the dough should still appear somewhat crumbly.

Rolling Out the Pie Crust:

Preheat your oven to 375°F (190°C).

On a floured surface, roll out the chilled dough into a circle large enough to fit your pie pan.

Carefully transfer the dough to the pie pan and gently press it into the bottom and sides.

Trim any excess dough, leaving about a 1-inch overhang.

Use a fork to prick the bottom of the crust to prevent it from puffing up during baking.

Optionally, you can crimp the edges of the crust for a decorative finish.

Blind Baking:

To ensure a crisp bottom crust, it’s a good idea to blind bake the crust before adding the sweet potato filling. To do this:

Line the pie crust with parchment paper or aluminum foil, and fill it with pie weights or dried beans.

Bake in the preheated oven for 15 minutes.

Remove the weights and parchment/foil, then bake for an additional 10-15 minutes, or until the crust is lightly golden brown.

Once your pie crust is ready, set it aside to cool while you prepare the sweet potato filling.

The Perfect Sweet Potato Filling

Creating the perfect sweet potato filling is where the magic of sweet potato pie truly happens. To achieve that creamy, sweet, and spiced flavor, you’ll need a combination of ingredients carefully balanced to bring out the best in the sweet potatoes.

2 cups mashed sweet potatoes (about 2-3 medium sweet potatoes)
3/4 cup granulated sugar
1/4 cup brown sugar
2 large eggs
1/2 cup whole milk
2 tablespoons unsalted butter, melted
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon salt

Instructions:

In a large mixing bowl, combine the mashed sweet potatoes, granulated sugar, and brown sugar. Mix until well combined.

Add the eggs, one at a time, mixing well after each addition.

Stir in the melted butter, whole milk, and vanilla extract until the mixture is smooth and creamy.

Add the ground cinnamon, ground nutmeg, ground ginger, and salt. Mix until all the spices are evenly incorporated into the filling.

Assembling and Baking the Pie:

Preheat your oven to 350°F (175°C).

Pour the sweet potato filling into the pre-baked pie crust, spreading it evenly.

Bake the pie in the preheated oven for 45-50 minutes or until the filling is set, and a toothpick inserted into the center comes out clean.

If the edges of the pie crust start to brown too quickly, you can cover them with foil or a pie crust shield to prevent burning.

Allow the sweet potato pie to cool completely before serving. It’s important to note that sweet potato pie is often best when refrigerated for a few hours or overnight, as this allows the flavors to meld and the texture to set.
