A Step-by-Step Guide on How to Cook Chinese Kung Pao Chicken

Unraveling the Essence of Kung Pao Chicken

Kung Pao Chicken, also known as Gong Bao Ji Ding, originated in the Sichuan province of China and has become a beloved dish worldwide. Named after Ding Baozhen, a Qing Dynasty official with the title “Kung Pao,” this dish combines tender chunks of chicken with a medley of vegetables, peanuts, and a distinctive spicy and tangy sauce.

Ingredients for Kung Pao Chicken

For the Chicken Marinade:

1 lb boneless, skinless chicken breasts, cut into bite-sized cubes
1 tablespoon soy sauce
1 tablespoon Shaoxing wine (Chinese cooking wine) or dry sherry
1 tablespoon cornstarch
1 teaspoon sesame oil

For the Kung Pao Sauce:

3 tablespoons soy sauce
2 tablespoons rice vinegar
1 tablespoon hoisin sauce
1 tablespoon sugar
1 teaspoon cornstarch

Other Ingredients:

2 tablespoons vegetable oil (for cooking)
3-4 dried red chilies (adjust to taste)
3 cloves garlic, minced
1-inch piece of ginger, finely chopped
1/2 cup unsalted peanuts
1 red bell pepper, diced
1 green bell pepper, diced
4 green onions, sliced (white and green parts separated)

Equipment Needed

Wok or large skillet
Wooden spatula or cooking spoon
Mixing bowls
Cutting board and knife

Step-by-Step Guide to Cooking Kung Pao Chicken

Step 1: Marinate the Chicken

In a bowl, combine the chicken cubes with soy sauce, Shaoxing wine, cornstarch, and sesame oil. Mix well and let it marinate for at least 15-20 minutes.

Step 2: Prepare the Kung Pao Sauce

In another bowl, whisk together soy sauce, rice vinegar, hoisin sauce, sugar, and cornstarch until well combined. Set aside.

Step 3: Heat the Wok

Place a wok or large skillet over high heat. Add vegetable oil and let it heat until it shimmers.

Step 4: Stir-Fry the Chicken

Add the marinated chicken to the hot wok. Stir-fry until the chicken is browned and cooked through. Remove the chicken from the wok and set it aside.

Step 5: Sauté Aromatics and Peanuts

In the same wok, add a bit more oil if needed. Add dried red chilies, minced garlic, and chopped ginger. Stir-fry for about 30 seconds until fragrant.

Add the unsalted peanuts and continue to stir-fry for another 1-2 minutes until the peanuts are slightly toasted.

Step 6: Add Vegetables

Incorporate the diced red and green bell peppers into the wok. Stir-fry for an additional 2-3 minutes until the vegetables are crisp-tender.

Step 7: Combine Chicken and Sauce

Return the cooked chicken to the wok. Mix in the sliced white parts of the green onions.

Pour the prepared Kung Pao sauce over the chicken and vegetables. Stir well to coat everything evenly.

Step 8: Finish and Serve

Cook for an additional 1-2 minutes until the sauce thickens and coats the ingredients.

Garnish with the sliced green parts of the green onions.

Serve the Kung Pao Chicken over steamed rice and enjoy your homemade Chinese culinary creation.

Adjust Spice Level: Control the heat by adjusting the number of dried red chilies. Remove the seeds for less heat or add more for extra spiciness.
