  • 1/2 teaspoon baking soda
  • 1 cup unsalted butter, room temperature
  • 1/2 cup granulated sugar
  • 1 cup packed light-brown sugar
  • 1 teaspoon salt
  • 2 teaspoons pure vanilla extract
  • 2 large eggs
  • 2 cups semisweet and/or milk chocolate chips

Instructions:

  • Preheat oven to 350°F (175°C).
  • In a small bowl, whisk together the flour and baking soda; set aside.
  • In the bowl of an electric mixer, combine the butter with both sugars; beat on medium speed until light and fluffy. Reduce speed to low; add the salt, vanilla, and eggs.
  • Beat until well mixed, about 1 minute.
  • Add flour mixture; mix until just combined. Stir in the chocolate chips.
  • Drop heaping tablespoon-size balls of dough about 2 inches apart on baking sheets lined with parchment paper.
  • Bake until cookies are golden around the edges, but still soft in the center, 8 to 10 minutes. Remove from oven, and let cool on baking sheet 1 to 2 minutes. Transfer to a wire rack, and let cool completely.

Lemon Bars

Ingredients:

  • For the crust:
  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt

For the filling:

  • 4 large eggs
  • 1 1/2 cups granulated sugar
  • 1/4 cup all-purpose flour
  • 2/3 cup freshly squeezed lemon juice
  • 1 tablespoon grated lemon zest
  • Confectioners’ sugar, for dusting

Instructions:

  • Preheat oven to 350°F (175°C). Line a 9×13-inch baking dish with parchment paper, leaving an overhang on all sides.
  • To make the crust: In a medium bowl, cream together the butter and sugar until light and fluffy. Add the flour and salt, and mix until just combined. Press the mixture into the bottom of the prepared baking dish.
  • Bake for 15 to 20 minutes, or until the crust is golden brown. Remove from oven and set aside to cool slightly.
  • To make the filling: In a large bowl, whisk together the eggs, sugar, flour, lemon juice, and lemon zest until well combined. Pour the filling over the warm crust.
  • Bake for 20 to 25 minutes, or until the filling is set and the top is lightly golden. Remove from oven and allow to cool completely in the baking dish.
  • Once cooled, use the parchment overhang to lift the bars out of the baking dish. Dust with confectioners’ sugar before cutting into squares.
