How to Prepare Kunafa: A Step-by-Step Guide

Kunafa is a delightful Middle Eastern dessert made of shredded phyllo dough, layered with creamy fillings like cheese, nuts, or cream, and soaked in a sweet sugar syrup. It is popular across many countries, with slight variations, and is often served during festive occasions or as a treat after a meal.

In this article, we will walk you through the steps to prepare kunafa from scratch. It’s a rich and satisfying dessert, and while it may look complex, you can easily make it at home by following these steps.

Ingredients You’ll Need

For the Kunafa Dough:

  • 500g kunafa dough (shredded phyllo dough)
  • 200g unsalted butter, melted

For the Cheese Filling:

  • 250g mozzarella cheese, shredded (or any soft, unsalted cheese)
  • 250g ricotta cheese (or fresh cheese like Nabulsi or Akkawi)
  • 2 tablespoons sugar
  • 2 tablespoons rose water or orange blossom water (optional)

For the Sugar Syrup:

  • 1 ½ cups granulated sugar
  • 1 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon rose water or orange blossom water (optional)

For Garnishing:

  • Crushed pistachios (optional)

Step-by-Step Instructions

Step 1: Prepare the Sugar Syrup (Qatar)

The sugar syrup is an essential part of kunafa, giving it a sweet and sticky finish.

  1. In a saucepan, add the sugar and water. Stir over medium heat until the sugar dissolves completely.
  2. Once the sugar is dissolved, increase the heat and bring the mixture to a boil.
  3. Add the lemon juice, which will prevent crystallization, and let the syrup simmer for about 7-10 minutes until it thickens slightly.
  4. Turn off the heat, and if you like, add the rose water or orange blossom water for a fragrant aroma.
  5. Allow the syrup to cool at room temperature. You can prepare this syrup in advance and refrigerate it until needed.

Step 2: Prepare the Kunafa Dough

  1. Take the shredded kunafa dough and break it into small pieces using your hands or scissors. The finer the pieces, the easier they will bake evenly.
  2. In a large bowl, pour the melted butter over the dough.
  3. Toss the dough gently with your hands, ensuring that every piece is evenly coated with butter. The butter helps to give the kunafa its golden, crispy texture when baked.

Step 3: Prepare the Cheese Filling

  1. If you’re using a salty cheese like Akkawi or Nabulsi, you’ll need to soak it in water for a few hours (or overnight) to remove the salt. Change the water a few times during the soaking process.
  2. In a mixing bowl, combine the shredded mozzarella and ricotta cheeses. Add sugar and rose water (if using) and mix everything until smooth.
  3. Set the cheese filling aside until you’re ready to assemble the kunafa.

Step 4: Assemble the Kunafa

  1. Preheat your oven to 350°F (175°C).
  2. Grease a round baking pan (10-12 inches) with butter or oil to prevent sticking.
  3. Spread half of the buttered kunafa dough evenly across the bottom of the pan. Use your hands to press it down firmly, creating a flat and smooth surface.
  4. Pour the cheese mixture over the first layer of kunafa dough. Spread it evenly but avoid pushing the cheese all the way to the edges of the pan to prevent it from leaking during baking.
  5. Now, layer the remaining half of the kunafa dough over the cheese. Gently press it down with your hands, ensuring it covers the cheese layer completely.

Step 5: Bake the Kunafa

  1. Place the assembled kunafa in the preheated oven and bake for 30-40 minutes, or until the top is golden brown and crispy.
  2. Check the kunafa halfway through the baking time to ensure it’s not burning. You can rotate the pan to achieve an even bake.
  3. Once the kunafa turns golden and crisp, remove it from the oven.

Step 6: Add the Sugar Syrup

  1. Immediately after taking the kunafa out of the oven, pour the cooled sugar syrup over it. Be generous with the syrup, as it will be absorbed by the dough and cheese, giving the kunafa its signature sweetness.
  2. Let the kunafa sit for a few minutes to allow the syrup to soak in.

Step 7: Garnish and Serve

  1. Garnish the top of the kunafa with crushed pistachios or any nuts of your choice for added texture and color.
  2. Slice the kunafa into portions and serve it warm. Kunafa is best enjoyed fresh out of the oven when the cheese is soft and stretchy.

Variations of Kunafa

Kunafa can be prepared in many different ways depending on your taste preferences and regional variations.

1. Cream Kunafa (Kunafa bil Ashta)

Instead of using cheese as a filling, you can make kunafa with a cream filling called “ashta.” This version is popular in Lebanon and Syria.

To prepare the cream filling:

  • In a saucepan, heat 2 cups of milk, 3 tablespoons of cornstarch, and 2 tablespoons of sugar over medium heat.
  • Stir constantly until the mixture thickens into a creamy consistency.
  • Once thick, let it cool, then use it in place of the cheese layer in the kunafa.

2. Nut Kunafa

For a crunchy and nutty variation, replace the cheese with a mixture of ground nuts such as walnuts, almonds, or hazelnuts. Mix the nuts with sugar, cinnamon, and a bit of rose water, then layer it between the kunafa dough.

3. Chocolate Kunafa

If you’re a chocolate lover, you can add a twist by filling the kunafa with a layer of melted chocolate or Nutella. This modern variation is sure to be a hit with both adults and children.

4. Kunafa Cups

For individual servings, you can make kunafa in muffin tins or small ramekins. Follow the same steps for preparing the dough and filling but use smaller molds. These mini kunafa cups are perfect for parties or special gatherings.

Tips for Perfect Kunafa

Use Fresh Kunafa Dough: If possible, buy fresh kunafa dough from a Middle Eastern store. Frozen dough can be used but let it thaw completely before using.

Control the Sweetness: Adjust the amount of sugar syrup according to your preference. If you like your desserts less sweet, use less syrup or opt for a thinner consistency.

Cheese Selection: Opt for unsalted or low-salt cheese varieties to prevent the kunafa from becoming too salty. Soaking salty cheese in water can help reduce the salt content.
