  • Baking Powder: 1 teaspoon
  • Baking Soda: 1/2 teaspoon
  • Ground Cinnamon: 1 teaspoon (optional, for extra flavor)
  • Ground Nutmeg: 1/2 teaspoon (optional, for extra flavor)
  • Ground Ginger: 1/2 teaspoon (optional, for extra flavor)
  • Salt: 1/2 teaspoon
  • Eggs: 4 (medium-sized, at room temperature)
  • Granulated Sugar: 150 grams
  • Brown Sugar: 50 grams (or use all granulated sugar if preferred)
  • Vegetable Oil: 150 milliliters (or use another neutral-flavored oil like canola oil)
  • Vanilla Extract: 1 teaspoon
  • Grated Lemon Zest: 1 teaspoon (optional, for a fresh citrus flavor)
  • Chopped Nuts: 100 grams (such as walnuts or pecans, optional)

For the Frosting:

  • Cream Cheese: 300 grams, softened
  • Unsalted Butter: 100 grams, softened
  • Powdered Sugar: 200 grams (sifted to remove any lumps)
  • Vanilla Extract: 1/2 teaspoon
  • Chopped Nuts: (Optional, for garnish)

Equipment

  • Mixing bowls
  • Electric mixer or whisk
  • Measuring cups and spoons
  • Grater
  • Spatula
  • Cake pan (9-inch round or equivalent)
  • Parchment paper
  • Cooling rack
  • Offset spatula (for frosting)
  • Piping bag (optional, for decorative frosting)

Instructions

Step 1: Prepare the Dry Ingredients

Combine Flours and Spices: In a medium-sized mixing bowl, whisk together the low-gluten flour, baking powder, baking soda, ground cinnamon, nutmeg, ginger, and salt until well combined. Set aside.

Step 2: Prepare the Wet Ingredients

Grate the Carrots: Peel the carrots and grate them using a fine grater. You should have about 300 grams of grated carrots. Set aside.

Mix the Eggs and Sugar: In a large mixing bowl, add the eggs, granulated sugar, and brown sugar. Use an electric mixer to beat on medium speed until the mixture is light and fluffy, about 3-4 minutes.

  • With the mixer running, slowly pour in the vegetable oil in a steady stream. Mix until fully incorporated.
  • Add the vanilla extract and grated lemon zest (if using) and mix until combined.

Add Dry Ingredients: Gradually add the dry ingredient mixture to the wet ingredients in three parts, mixing on low speed until just combined after each addition. Avoid over-mixing, as this can make the cake dense.

Fold in Carrots and Nuts: Using a spatula, gently fold in the grated carrots and chopped nuts (if using) until evenly distributed throughout the batter.
