How to Make Chinese Mango Pudding: A Simple, Delicious Recipe

Chinese mango pudding is a beloved dessert that is creamy, sweet, and full of vibrant mango flavor. It’s a popular dish served in many Chinese restaurants, especially in Hong Kong, and is loved for its smooth texture and refreshing taste. In this article, we will explore how to make Chinese mango pudding at home. The recipe is simple, and you can enjoy it with friends and family.

Ingredients You’ll Need

To make Chinese mango pudding, you’ll need a few simple ingredients that are easy to find at your local grocery store or Asian market. Here’s what you need:

Mangoes: You will need ripe, sweet mangoes for the best flavor. Typically, two medium-sized mangoes are enough.

Coconut Milk: Coconut milk gives the pudding a smooth, creamy texture and a subtle tropical flavor. It also complements the mango very well.

Milk: Regular milk will help balance the creaminess of the coconut milk, making the pudding less rich and more refreshing.

Gelatin: Gelatin is essential for setting the pudding. It will give the pudding its firm yet smooth texture. You can use powdered gelatin or agar-agar if you prefer a vegetarian version.

Sugar: Adding a bit of sugar enhances the sweetness of the mangoes and helps create a smooth consistency.

Water: You’ll need some water to dissolve the gelatin.

Optional Ingredients: You can also use evaporated milk for extra creaminess or a splash of vanilla extract to enhance the flavor.

Step-by-Step Instructions

Making Chinese mango pudding is easy, and the process is straightforward. Just follow these simple steps to create this delicious treat.

Step 1: Prepare the Mangoes

To begin, peel the mangoes and remove the pit. Cut the flesh into chunks, being careful to avoid the fibrous parts near the pit. After you have all the mango flesh, place it into a blender or food processor. Blend the mango until you get a smooth puree. If you like your pudding to have a bit of texture, you can leave it slightly chunky, but traditionally, the mango puree is smooth.

Step 2: Dissolve the Gelatin

Next, dissolve the gelatin in water. You can use about 1 tablespoon of powdered gelatin and dissolve it in 1/4 cup of cold water. Stir gently to make sure the gelatin is completely dissolved. Let the gelatin sit for 5 minutes to bloom (soften).

After the gelatin has bloomed, place the mixture in a small saucepan over low heat. Stir constantly until the gelatin has completely dissolved, making sure not to let it boil. Once the gelatin is dissolved, remove the saucepan from heat.

Step 3: Mix Coconut Milk, Milk, and Sugar

While the gelatin is dissolving, it’s time to prepare the creamy base for the pudding. In a separate saucepan, combine the coconut milk, regular milk, and sugar. Place it over medium heat, stirring occasionally until the sugar has completely dissolved. You don’t need to boil the milk mixture; just heat it enough so that the sugar dissolves and everything is well combined.

Step 4: Combine the Mango Puree and Milk Mixture

Now that the milk mixture and the mango puree are ready, it’s time to combine them. First, pour the mango puree into a large mixing bowl. Slowly add the milk mixture to the mango puree, stirring constantly. This will create a smooth, creamy mango base for your pudding.

Step 5: Add the Gelatin to the Mango Mixture

Once the milk and mango puree are combined, it’s time to add the dissolved gelatin. Pour the gelatin mixture into the bowl with the mango and milk mixture. Stir well to ensure that the gelatin is evenly distributed throughout the pudding.

Step 6: Set the Pudding

After all the ingredients are combined, it’s time to pour the mixture into individual serving cups or a large mold. Be sure to pour slowly to avoid any bubbles. Place the cups or mold into the refrigerator and allow them to set for at least 4 hours, or overnight if you prefer a firmer pudding.

Step 7: Serve and Enjoy

Once the pudding has fully set, it’s time to serve. If you used a large mold, you can easily unmold the pudding by dipping the bottom of the mold in warm water for a few seconds. Then, invert the mold onto a serving plate. If you used individual cups, simply serve them as they are.

Garnish your mango pudding with fresh mango slices, a drizzle of condensed milk, or a few mint leaves for extra flavor and presentation. You can also serve the pudding with a side of sweetened coconut milk for extra richness.

Tips for Perfect Mango Pudding

Use Ripe Mangoes: The flavor of your mango pudding depends on the quality of the mangoes you use. Make sure they are ripe and sweet for the best flavor. If your mangoes are not very sweet, you can adjust the sugar accordingly.

Gelatin Alternatives: If you prefer a vegetarian version of this pudding, you can replace gelatin with agar-agar. Agar-agar is a plant-based alternative that works similarly to gelatin but has a slightly firmer texture.

Adjust Sweetness: Mangoes vary in sweetness, so feel free to adjust the sugar to suit your taste. Taste the mango puree before adding the sugar to ensure the sweetness is to your liking.

Chill the Pudding Well: For the best texture, make sure to refrigerate the pudding long enough to allow it to set properly. If you don’t let it set enough, the pudding may be too runny.

Use Coconut Milk: For an authentic taste, use canned coconut milk instead of coconut cream or low-fat versions. Coconut milk adds the right level of richness and flavor to the pudding.

Garnish Creatively: While fresh mango is a great garnish, you can also add a little toasted coconut, a dollop of whipped cream, or even a sprinkle of chili powder for a unique twist.

Health Benefits of Mango Pudding

Mangoes are rich in vitamins, particularly Vitamin C, which boosts your immune system and supports skin health. They are also a good source of fiber, which promotes digestion. Coconut milk provides healthy fats, while the milk offers calcium for strong bones. However, keep in mind that the pudding can be high in sugar, so it’s best enjoyed in moderation.

Conclusion

Making Chinese mango pudding at home is simple, and the result is a creamy, tropical dessert that everyone will love. With just a few ingredients, you can enjoy the refreshing flavors of ripe mangoes in a smooth pudding that’s perfect for any occasion. Whether you’re serving it at a family gathering or enjoying a quiet evening at home, this dessert will surely impress. So, gather your ingredients and try making this delicious Chinese mango pudding today!
