How to Make Chinese Beef Noodles

Chinese beef noodles are a classic dish that brings together tender beef, flavorful broth, and perfectly cooked noodles. It is a comforting meal that has been enjoyed for generations in China. This dish combines rich, savory flavors with simple ingredients, and the result is a hearty and satisfying meal. In this article, we will guide you step by step on how to make Chinese beef noodles from scratch.

Ingredients for Chinese Beef Noodles

Before we start, let’s gather the necessary ingredients. You will need:

For the Beef:

  • 500g of beef shank or beef brisket (you can also use other cuts like short ribs or chuck)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine (or dry sherry)
  • 1 teaspoon sugar
  • 1 small onion, halved
  • 2-3 cloves garlic, smashed
  • 1 piece of ginger (about 2 inches), sliced
  • 1-2 star anise
  • 1-2 bay leaves
  • 1 tablespoon Sichuan peppercorns (optional for added spice)
  • 6 cups beef broth (or water, if you prefer a lighter broth)
  • Salt, to taste

For the Noodles:

  • 300g fresh Chinese wheat noodles (you can also use dry noodles, but fresh will give the best texture)

For the Garnishes:

  • Chopped green onions (scallions)
  • Fresh cilantro (optional)
  • Chili oil (optional, for a bit of heat)
  • Pickled mustard greens or bok choy (optional, for crunch and flavor)

Step 1: Preparing the Beef

The beef is the star of this dish, and the key to achieving a flavorful broth lies in how you prepare it.

Cutting the Beef

Start by cutting the beef into large chunks. If you are using beef shank or brisket, aim for pieces about 2-3 inches in size. This will allow the beef to cook evenly and become tender.

Blanching the Beef

Place the beef chunks in a large pot of cold water. Turn the heat to medium-high and bring the water to a boil. Once the water starts to boil, you will notice some impurities rising to the surface. Skim these off with a ladle or spoon to ensure a clean broth. Once the impurities are removed, drain the beef and rinse it under cold water to wash away any excess scum.

Step 2: Cooking the Beef

Now that the beef is prepped, it’s time to cook it in the flavorful broth.

Prepare the Broth

In a separate large pot, combine the beef, 6 cups of beef broth (or water if you prefer), soy sauce, rice wine, sugar, onion, garlic, ginger, star anise, bay leaves, and Sichuan peppercorns (if using). Bring the mixture to a boil over medium-high heat.

Simmer the Broth

Once the broth comes to a boil, reduce the heat to low and let it simmer for 1.5 to 2 hours. During this time, the beef will become tender and absorb all the delicious flavors from the spices and seasonings. You can cover the pot partially to keep the broth from reducing too much. Be sure to check the beef every 30 minutes to ensure it’s cooking evenly.

Check the Beef

After about 1.5 to 2 hours, the beef should be tender and easily pierced with a fork. If it’s not yet tender, continue to simmer it for another 30 minutes to 1 hour, depending on the cut of beef.

Season the Broth

Taste the broth and adjust the seasoning with salt if necessary. If you like a richer flavor, you can add a little more soy sauce or a splash of rice wine.

Step 3: Cooking the Noodles

While the beef is simmering, it’s a good time to prepare the noodles. If you are using fresh noodles, they should only take a few minutes to cook.

Boil Water for Noodles

Bring a large pot of water to a boil. Add a pinch of salt to the water, which will help enhance the flavor of the noodles.

Cook the Noodles

Add the fresh Chinese wheat noodles to the boiling water and cook according to the package instructions, usually around 2-3 minutes for fresh noodles. Be sure not to overcook them, as they will continue to cook when added to the broth later.

Drain the Noodles

Once the noodles are cooked, drain them and rinse them briefly under cold water to stop the cooking process and prevent them from sticking together.

Step 4: Assembling the Dish

Once the beef and noodles are ready, it’s time to bring everything together.

Prepare Bowls

In each serving bowl, add a portion of the cooked noodles. You can divide the noodles evenly based on the number of servings you plan to make.

Add the Beef

Take the tender beef chunks out of the broth and place them on top of the noodles. Use a slotted spoon to avoid adding too much of the cooking liquid. Arrange the beef chunks neatly in each bowl.

Ladle the Broth

Using a ladle, pour the hot beef broth over the noodles and beef. Be sure to pour enough broth to cover the noodles, but not so much that the noodles become too soggy. Leave a little bit of broth in the pot for extra servings if needed.

Step 5: Garnishing the Noodles

To finish off the dish, add some fresh garnishes for extra flavor and texture.

Top with Green Onions and Cilantro

Sprinkle freshly chopped green onions and cilantro over the top of the noodles and beef. This will add a fresh and aromatic touch to the dish.

Add Pickled Vegetables

If you like a bit of crunch and tanginess, add some pickled mustard greens or bok choy. These vegetables are a common addition to Chinese beef noodles and help balance out the rich flavors of the beef and broth.

Chili Oil

If you like spicy food, drizzle a bit of chili oil over the noodles for an extra kick. This will also add a beautiful red color to the dish.

Step 6: Serving the Chinese Beef Noodles

Your Chinese beef noodles are now ready to serve! This dish is typically served hot and enjoyed immediately. You can also offer extra chili oil, pickled vegetables, and soy sauce on the side for guests to adjust the flavors to their liking.

Tips for Making the Best Chinese Beef Noodles

Beef Cut: The cut of beef is important. Beef shank or brisket is ideal because it becomes tender after slow cooking and has great flavor. Avoid lean cuts as they may become tough.

Broth Flavor: The key to a good broth is to let it simmer slowly for a long time to extract all the flavors from the beef and spices. Don’t rush this process.

Spices: Feel free to adjust the spices to your taste. If you like more heat, add more Sichuan peppercorns or even some dried chili peppers.

Fresh Noodles: Fresh noodles will give the dish the best texture, but if you can’t find them, you can use any type of wheat noodles. Just be sure to cook them al dente.
