How to Make Chinese Chicken Wings: A Step-by-Step Guide

Chinese chicken wings are a popular dish known for their savory, sweet, and slightly tangy flavors. These wings are crispy on the outside, tender on the inside, and coated with a delicious sauce that combines traditional Chinese ingredients. In this guide, we will walk you through the process of making Chinese chicken wings at home. Whether you’re preparing for a family dinner or a party, this recipe will not disappoint.

Ingredients for Chinese Chicken Wings

To make delicious Chinese chicken wings, you will need the following ingredients:

For the Chicken Wings:

  • 10–12 chicken wings (drumettes and flats)
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste
  • 1 tablespoon cornstarch (optional, for extra crispiness)

For the Marinade:

  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey

For the Sauce:

  • 1/4 cup soy sauce
  • 2 tablespoons honey or brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 2 teaspoons minced garlic
  • 1 teaspoon grated ginger
  • 1/2 teaspoon chili paste or crushed red pepper flakes (optional)

Garnishes:

  • Sesame seeds (optional)
  • Sliced green onions (optional)
  • Fresh cilantro (optional)

Step 1: Preparing the Chicken Wings

Before cooking the chicken wings, it’s important to prepare them properly to ensure they cook evenly and develop a crispy texture.

Clean the Wings: Begin by washing the chicken wings under cold water. Pat them dry using paper towels to remove any excess moisture. This will help the skin crisp up when cooking.

Trim the Wings: If your chicken wings are whole, you can separate them into two parts: the drumettes and the flats. To do this, simply cut through the joint connecting the two parts. Discard the wing tips or save them for making stock.

Season the Wings: Season the wings with a pinch of salt and pepper. For extra crispiness, toss the wings in cornstarch. This step is optional, but it helps create an extra crunchy coating.

Step 2: Cooking the Chicken Wings

Baking Method:

Preheat the Oven: Preheat your oven to 400°F (200°C). This high temperature will help the wings get crispy while cooking.

Prepare a Baking Sheet: Line a baking sheet with parchment paper or foil for easy cleanup. Place a wire rack on top of the baking sheet. This will allow air to circulate around the wings, helping them cook evenly.

Arrange the Wings: Lay the marinated chicken wings in a single layer on the wire rack. Make sure the wings are not touching each other to ensure they cook evenly.

Bake the Wings: Place the baking sheet in the oven and bake the wings for 25–30 minutes. After 15 minutes, flip the wings over to ensure both sides become golden and crispy. Keep an eye on the wings towards the end to prevent them from burning.

Check for Doneness: To check if the wings are done, insert a meat thermometer into the thickest part of a wing. The internal temperature should reach 165°F (74°C). If the wings aren’t crispy enough, increase the temperature to 425°F (220°C) for the last 5–10 minutes of cooking.

Frying Method:

Heat the Oil: In a large pot or deep fryer, heat vegetable oil to 350°F (175°C). You will need enough oil to fully submerge the wings.

Fry the Wings: Carefully place the marinated chicken wings into the hot oil. Do not overcrowd the pot; fry in batches if necessary. Fry the wings for 8–10 minutes, or until golden brown and crispy. Use a slotted spoon to remove the wings from the oil and place them on a paper towel-lined plate to drain excess oil.

Drain and Rest: Let the wings rest for a few minutes before tossing them in the sauce.

Air Fryer Method:

Preheat the Air Fryer: Preheat the air fryer to 400°F (200°C).

Arrange the Wings: Arrange the marinated chicken wings in a single layer in the air fryer basket. Do not overcrowd the basket to allow air to circulate around the wings.

Air Fry the Wings: Cook the wings for 20–25 minutes, flipping them halfway through the cooking time. The wings should be golden brown and crispy when done.

Check for Doneness: As with the other methods, check the internal temperature of the wings. It should reach 165°F (74°C) for safety.

Step 3: Making the Sauce

While your chicken wings are cooking, you can prepare the flavorful sauce that will coat the wings. This sauce is what gives Chinese chicken wings their signature taste.

Combine the Sauce Ingredients: In a small saucepan, combine soy sauce, honey (or brown sugar), rice vinegar, hoisin sauce, sesame oil, garlic, ginger, and chili paste (if using). Stir well to combine.

Step 4: Tossing the Wings in Sauce

Once your wings are cooked, it’s time to toss them in the sauce. This step ensures the wings are coated in the sweet, savory glaze that makes them irresistible.

Place the Wings in a Bowl: Transfer the cooked chicken wings to a large mixing bowl.

Add the Sauce: Pour the prepared sauce over the wings. Use tongs or a spoon to toss the wings in the sauce until they are evenly coated.

Serve Immediately: Garnish the wings with sesame seeds, sliced green onions, and fresh cilantro if desired. Serve the wings hot, and enjoy!

Tips for Perfect Chinese Chicken Wings
