How to Make Chinese Lemon Sauce: A Step-by-Step Guide

Chinese lemon sauce is a tangy, sweet, and savory sauce that perfectly complements dishes like lemon chicken or lemon shrimp. It’s a popular choice in Chinese-American cuisine for its fresh and zesty flavor. Making it at home is simple, and the ingredients are easy to find. In this article, we’ll take a step-by-step look at how to make Chinese lemon sauce.

What You Need for Chinese Lemon Sauce

Before you start making the sauce, it’s important to gather all the necessary ingredients. Here is what you will need:

Lemon juice: Fresh lemon juice is best for a bright, refreshing flavor.

Sugar: Adds sweetness to balance the sourness of the lemon.

Soy sauce: Provides a salty, umami taste to complement the other flavors.

Chicken broth: Adds depth to the sauce. You can use vegetable broth for a vegetarian version.

Step-by-Step Guide to Making Chinese Lemon Sauce

Step 1: Prepare the Lemon

Start by preparing the lemons. You will need about 2-3 lemons, depending on how much juice you need. Here’s how to extract the juice:

  • Roll the lemon on the countertop before cutting it. This helps release more juice.
  • Cut the lemon in half and use a juicer or squeeze by hand to extract the juice. Be sure to remove any seeds from the juice.

You’ll need about 1/4 cup of fresh lemon juice for this recipe.

Step 2: Prepare the Broth and Liquids

In a bowl, combine the following ingredients:

  • 1/4 cup of chicken or vegetable broth
  • 1/4 cup of soy sauce
  • 2 tablespoons of rice vinegar
  • 1/2 cup of water

Whisk the ingredients together until they are well combined. This mixture will form the base of your lemon sauce.

Step 3: Make the Thickening Slurry

In a separate bowl, mix together 2 tablespoons of cornstarch with 2 tablespoons of cold water. Stir until the cornstarch is fully dissolved in the water. This will form a slurry that will thicken the sauce as it cooks. Set it aside for later.

Step 4: Sauté Garlic and Ginger

In a medium-sized saucepan, heat 1 tablespoon of sesame oil over medium heat. Once the oil is hot, add 2 cloves of minced garlic and 1 teaspoon of freshly grated ginger. Next, pour the broth mixture (from Step 2) into the saucepan with the lemon juice, garlic, and ginger. Stir everything together and bring it to a gentle simmer. Let the sauce cook for about 3-5 minutes, allowing the flavors to meld together.

Step 7: Thicken the Sauce

Now it’s time to thicken the sauce. Stir the cornstarch slurry (from Step 3) into the simmering sauce. Stir constantly to prevent lumps from forming. The sauce will begin to thicken almost immediately. Continue to cook for another 2-3 minutes, until the sauce reaches your desired consistency. If the sauce gets too thick, you can always add a little more water to thin it out.

Step 8: Adjust the Flavor

Taste the sauce and adjust the flavor to your liking. If you want it sweeter, add a little more sugar. If you prefer more acidity, add a bit more lemon juice or rice vinegar. If you like it spicier, sprinkle in some chili flakes.
