How Do You Make Lava Cake?

How to Make a Cake with Mayonnaise

Lava cake, also known as molten chocolate cake, is a delightful dessert that features a rich chocolate exterior with a gooey, molten center. This indulgent treat is perfect for special occasions or a comforting treat after dinner. In this article, we will walk you through a detailed process of making lava cake, from gathering ingredients to the final presentation.

Ingredients Needed

Before you begin, gather the following ingredients:

For the Cake

  • 1 cup (170g) semi-sweet chocolate chips or chopped chocolate
  • ½ cup (115g) unsalted butter
  • 1 cup (120g) powdered sugar
  • 2 large eggs
  • 2 large egg yolks
  • ½ teaspoon vanilla extract
  • ⅓ cup (40g) all-purpose flour
  • Pinch of salt

For Serving (Optional)

  • Vanilla ice cream
  • Fresh berries (strawberries, raspberries, or blueberries)
  • Chocolate sauce

  • Double boiler or microwave-safe bowl
  • Mixing bowls
  • Whisk or electric mixer
  • Spatula
  • Ramekins or muffin tin
  • Baking sheet
  • Cooking spray or butter for greasing

Step-by-Step Instructions

Step 1: Prepare the Ramekins

Preheat the Oven: Start by preheating your oven to 425°F (220°C). This high temperature will help create that perfect molten center.

Grease the Ramekins: Take four ramekins (6-ounce size works well) and grease them generously with butter or cooking spray. This step is crucial to ensure that the cakes can be easily removed after baking.

Dust with Flour: After greasing, dust the insides of the ramekins with flour. Tap out any excess flour. This adds another layer of non-stick protection.

Step 2: Melt the Chocolate and Butter

Set Up a Double Boiler: If you have a double boiler, fill the bottom pot with water and bring it to a simmer. Place the top pot on it and add the chocolate and butter.

Melt Over Heat: Stir the mixture constantly until both the chocolate and butter are completely melted and smooth. If you don’t have a double boiler, you can melt them in the microwave. Heat in 30-second intervals, stirring in between until smooth.

Step 3: Mix the Ingredients

Combine Powdered Sugar: In a mixing bowl, add the melted chocolate-butter mixture and the powdered sugar. Whisk together until fully combined.

Add Eggs and Yolks: Next, add the two whole eggs and the two egg yolks to the mixture. Whisk vigorously until the mixture is smooth and well combined.

Incorporate Vanilla and Salt: Add the vanilla extract and a pinch of salt. Mix until combined. The salt enhances the chocolate flavor.

Add Flour: Finally, gently fold in the flour using a spatula. Be careful not to overmix; just combine until you see no dry flour.

Step 4: Fill the Ramekins

Pour the Batter: Divide the batter evenly among the prepared ramekins. Fill each one about ¾ full. This allows room for the cakes to rise.

Optional Step: Chill the Batter: If you want to prepare the cakes ahead of time, cover the ramekins with plastic wrap and refrigerate them for up to 24 hours. When ready to bake, remove them from the fridge and let them sit at room temperature for 30 minutes before baking.

Step 5: Bake the Lava Cakes

Bake: Place the filled ramekins on a baking sheet for easier handling. Bake in the preheated oven for 12-14 minutes. The edges should be firm, while the center will still be soft.

Check for Doneness: To test if the cakes are done, look for puffed tops and a slight jiggle in the center. Avoid overbaking; this will cause the center to cook through.

Step 6: Let Them Rest

Remove from Oven: Carefully take the baking sheet out of the oven. Let the cakes cool for 1 minute. This allows the edges to set slightly while keeping the center molten.

Step 7: Serve the Lava Cakes

Invert the Ramekins: Using an oven mitt, run a small knife around the edges of each cake to loosen it. Place a plate over the top of the ramekin and quickly flip it over. Gently lift the ramekin off, leaving the cake on the plate.

Add Toppings: Serve the lava cakes immediately. They are delicious on their own, but you can add a scoop of vanilla ice cream on the side, sprinkle with fresh berries, or drizzle with chocolate sauce.
