What Is A Good Christmas Eve Meal?

Appetizers to Kickstart the Feast

The Star Ingredient: Shrimp: Shrimp is a perennial favorite for Christmas Eve appetizers. It offers a delicate and slightly sweet flavor that is both indulgent and refined. When choosing shrimp for your cocktail, look for fresh, plump specimens. You can opt for jumbo shrimp for a more luxurious presentation or medium-sized ones for a more bite-sized option. The shrimp can be cooked in a variety of ways, such as boiling, steaming, or grilling. Boiling is a popular method as it is simple and allows the natural flavor of the shrimp to shine. Select a high-quality Brie wheel, preferably one that is ripe but not overly runny. Place the Brie on a baking sheet lined with parchment paper. You can either leave it in its wooden box or remove the rind if you prefer a more oozy texture. To add a touch of sweetness and acidity, spoon a generous amount of cranberry sauce over the top of the Brie. The cranberry sauce can be homemade or store-bought. Homemade cranberry sauce has the advantage of being customizable and often has a fresher flavor. You can surround it with crackers, sliced baguette, or even apple slices. The crackers or bread provide a vehicle for scooping up the delicious melted cheese, cranberry sauce, and walnuts. Look for a well-marbled piece of tenderloin, as the marbling will ensure a juicy and flavorful roast. Season the tenderloin generously with salt, pepper, and a blend of dried herbs such as thyme, rosemary, and oregano. Let the seasoned meat sit at room temperature for about 30 minutes before roasting. This allows the flavors to penetrate the meat and also ensures more even cooking.

In a large saucepan, combine the wine with whole cloves, cinnamon sticks, star anise, orange peel, and a little bit of honey or sugar. You can also add a splash of brandy or cognac for an extra kick.

The Cooking and Serving: Heat the mixture over low heat, stirring occasionally, until it is warm but not boiling. Let it simmer gently for about 15-20 minutes to allow the spices to infuse the wine. Strain the mulled wine into mugs or heatproof glasses and serve it warm. Garnish with a cinnamon stick or a slice of orange.

Eggnog

The Classic Recipe: Ingredients and Preparation: Eggnog is a creamy and indulgent holiday drink. The traditional recipe calls for eggs, cream, milk, sugar, and a generous amount of alcohol such as brandy, rum, or bourbon. In a blender or a mixer, combine the eggs (or egg substitute if you prefer a non-alcoholic version), sugar, and a little bit of the milk until well blended. Slowly add the remaining milk and cream, along with the alcohol if using. Blend until smooth and creamy.
