How to Cook Chinese New Year Dishes

Chinese New Year is one of the most important festivals in Chinese culture. It is celebrated with family gatherings, festive decorations, and, of course, delicious food. Each dish served during the Chinese New Year symbolizes something special, from prosperity to good health. The meals are often enjoyed with loved ones, and the food itself is a reflection of wishes for the coming year.

If you’re looking to create a festive and delicious Chinese New Year meal at home, this guide will walk you through some of the most popular dishes, their significance, and how to prepare them. These recipes are simple to follow, so even if you’re a beginner, you’ll be able to bring the flavors of the holiday to your table.

1. Dumplings (Jiaozi) – Symbol of Wealth and Prosperity

Dumplings are a must-have dish during Chinese New Year, especially in northern China. The shape of the dumplings is said to resemble ancient gold ingots, a symbol of wealth and prosperity.

Ingredients:

  • Dumpling wrappers (store-bought or homemade)
  • 500g ground pork (or a mix of pork and beef)
  • 1/2 cup finely chopped napa cabbage
  • 1/4 cup chopped green onions
  • 1 tablespoon grated ginger
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Instructions:

Prepare the filling: In a large bowl, combine the ground pork, chopped cabbage, green onions, ginger, soy sauce, sesame oil, salt, and pepper. Mix until everything is evenly incorporated.

Assemble the dumplings: Take a dumpling wrapper and place a teaspoon of the filling in the center. Fold the wrapper over to form a half-moon shape, pinching the edges tightly to seal. You can also pleat the edges to create a traditional look.

Cook the dumplings: There are two popular ways to cook dumplings:

  • Boiling: Bring a pot of water to a boil. Drop the dumplings in and cook for 5-7 minutes, or until they float to the surface.
  • Pan-frying: Heat a little oil in a pan. Place the dumplings in the pan and fry them until the bottoms are golden brown. Add a little water to the pan, cover, and steam the dumplings for another 5 minutes.

Serve: Serve the dumplings hot with a dipping sauce made from soy sauce, vinegar, and chili oil.

2. Fish (Yu) – Symbol of Abundance

In Chinese culture, the word “fish” (鱼, yú) sounds similar to “surplus” or “abundance” (余, yú). Eating fish symbolizes a wish for abundance and a prosperous year ahead. The fish is often served whole to represent completeness and unity.

Ingredients:

  • 1 whole fish (preferably steamed or braised)
  • 1 tablespoon soy sauce
  • 1 tablespoon rice wine or Shaoxing wine
  • 1 teaspoon sugar
  • 1 tablespoon sesame oil
  • 2-3 slices of ginger
  • 2-3 stalks of green onions
  • Fresh cilantro (for garnish)

Instructions:

Prepare the fish: Clean and scale the fish. Make a few diagonal slashes on each side of the fish to help it cook evenly and allow the flavors to penetrate.

Steam the fish: Place the fish on a steaming plate and top with ginger slices. Steam the fish over high heat for 8-10 minutes or until the flesh is opaque and easily flaked with a fork.

Make the sauce: While the fish is steaming, combine soy sauce, rice wine, sugar, and sesame oil in a small saucepan. Heat it over medium heat until it starts to simmer, then remove from the heat.

Serve the fish: Once the fish is cooked, remove it from the steamer and pour the sauce over the fish. Garnish with green onions and cilantro. Serve hot.

3. Spring Rolls – Symbol of Wealth and Good Fortune

Spring rolls are fried pastries filled with vegetables and sometimes meat. They are associated with wealth because their shape is similar to gold bars. Eating spring rolls is believed to bring financial prosperity.

Ingredients:

  • 10-12 spring roll wrappers
  • 200g shredded cabbage
  • 100g julienned carrots
  • 100g shiitake mushrooms (or any mushroom of your choice), thinly sliced
  • 100g cooked shrimp or chicken (optional)
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon sugar
  • Oil for frying

Instructions:

Prepare the filling: In a pan, heat some oil and sauté the mushrooms, carrots, and cabbage until softened. Add the shrimp or chicken (if using) and stir-fry for another 2-3 minutes. Season with soy sauce, oyster sauce, sesame oil, and sugar. Remove from heat and let the filling cool.

Assemble the spring rolls: Lay a spring roll wrapper flat on a clean surface. Spoon a small amount of the filling onto the wrapper, then fold in the sides and roll up tightly.

Fry the spring rolls: Heat oil in a wok or deep-fryer to 350°F (175°C). Fry the spring rolls in batches until golden brown and crispy, about 3-5 minutes. Drain on paper towels.

Serve: Serve hot with a sweet and sour dipping sauce.

4. Nian Gao (Glutinous Rice Cake) – Symbol of Progress and Growth

Nian Gao is a sweet, sticky rice cake that is often eaten during Chinese New Year. The word nian means “year,” and gao means “tall” or “high,” symbolizing growth, progress, and a better year ahead.

Ingredients:

  • 1 pound glutinous rice flour
  • 1/2 cup brown sugar
  • 1/4 cup water
  • 1/4 teaspoon vanilla extract (optional)
  • 1 tablespoon vegetable oil

Instructions:

Prepare the mixture: In a mixing bowl, combine the glutinous rice flour, brown sugar, and water. Stir until the sugar dissolves and the mixture forms a smooth batter.

Steam the cake: Grease a steaming dish with a little oil and pour the batter into the dish. Cover it with a piece of cheesecloth or foil. Steam the cake for about 45-60 minutes or until it is firm and fully cooked.

Cool and serve: Allow the cake to cool to room temperature. It can be served sliced and either enjoyed as is or stir-fried with savory ingredients like pork and vegetables.

5. Longevity Noodles (Changshou Mian) – Symbol of Longevity

Long noodles are an essential dish for Chinese New Year as they represent longevity and a long life. The longer the noodle, the longer your life is thought to be!

Ingredients:

  • 200g egg noodles or any long noodles
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon sugar
  • 1/4 cup chopped green onions
  • 1/4 cup cooked chicken or shrimp (optional)

Instructions:

Boil the noodles: Cook the noodles according to the package instructions. Drain and rinse under cold water to prevent them from sticking.

Prepare the sauce: In a bowl, mix together soy sauce, oyster sauce, sesame oil, and sugar.

Stir-fry the noodles: Heat a wok or large pan with a little oil. Add the cooked noodles and stir-fry them for 2-3 minutes. Add the sauce mixture and continue to stir-fry until the noodles are well coated.

Garnish and serve: Add the cooked chicken or shrimp and green onions to the noodles. Serve hot.

6. Sweet Rice Balls (Tangyuan) – Symbol of Family Unity

Tangyuan are sweet rice balls that are usually filled with sesame paste or red bean paste. They are often served in a sweet broth. The round shape symbolizes family unity and togetherness.

Ingredients:

  • 1 cup glutinous rice flour
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1/4 cup black sesame paste or red bean paste

Prepare the dough: Mix the glutinous rice flour, sugar, and water together to form a smooth dough. Divide the dough into small pieces and roll them into balls.

Fill the rice balls: Flatten each ball and place a small amount of black sesame paste or red bean paste in the center. Seal the dough around the filling and shape it back into a ball.
