How Do You Make Shrimp Fried Rice

Shrimp fried rice is a dish that combines the delicate taste of shrimp with the comforting texture of fried rice. It’s a perfect meal for both lunch and dinner, and it’s relatively easy to make at home. Rice: Use leftover rice, preferably jasmine or basmati, as it adds a unique flavor. If you must cook rice from scratch, use a ratio of 1 cup of rice to 2 cups of water and cook until tender. Let it cool and dry out a bit before using.

Vegetables:

  • 1 small onion, finely chopped
  • 1 small carrot, diced
  • 1/2 cup of peas (fresh or frozen)
  • 1/4 cup of diced bell pepper (optional, for added color and sweetness)
  • Eggs: 2-3 large eggs, beaten
  • Seasonings and Sauces:
  • 2 tablespoons of vegetable oil (or any oil you prefer for frying)
  • 1 tablespoon of soy sauce
  • 1 teaspoon of oyster sauce (optional, for added umami)
  • 1/2 teaspoon of salt (adjust to taste)
  • 1/4 teaspoon of white pepper (optional, for a bit of spice)
  • 1 clove of garlic, minced (optional, for added flavor)

Garnishes:

  • Chopped green onions or parsley (optional, for garnishing)
  • Lime wedges (optional, for serving)

Preparation Steps

Prepare the Shrimp

  • Peel and devein the shrimp. You can do this by peeling off the shell, cutting along the back of the shrimp with a sharp knife, and removing the dark intestinal vein.
  • Rinse the shrimp under cold running water and pat them dry with paper towels.
  • In a bowl, marinate the shrimp with 1/2 teaspoon of salt, a pinch of white pepper, and 1 teaspoon of vegetable oil. This helps to season the shrimp and keep them moist during cooking.

Prepare the Vegetables

  • Dice the onion, carrot, and bell pepper into small, uniform pieces. This ensures they cook evenly.
  • If using fresh peas, rinse them thoroughly. If using frozen peas, thaw them slightly before use.

Cook the Rice

  • If you’re using leftover rice, skip this step. If cooking rice from scratch, rinse the rice under cold water until the water runs clear.
  • In a pot, bring 2 cups of water to a boil. Add the rice, reduce the heat to low, cover, and simmer for about 15-20 minutes or until the water is absorbed and the rice is tender.
  • Fluff the rice with a fork and let it cool on a baking sheet to prevent clumping. You can also refrigerate the rice for an hour to dry it out further.

Cook the Shrimp

  • In a hot wok or large skillet, add 1 tablespoon of vegetable oil and heat over medium-high heat.
  • Add the marinated shrimp in a single layer, spreading them out evenly.
  • Cook the shrimp for about 1-2 minutes on each side or until they turn pink and opaque.
  • Remove the shrimp from the wok and set them aside on a plate.

Scramble the Eggs

  • In the same wok, add a little more oil if needed and heat over medium heat.
  • Pour in the beaten eggs and let them set slightly before stirring gently with a spatula or wooden spoon.
  • Scramble the eggs until they are fully cooked but still slightly moist.

Sauté the Vegetables

  • In the wok, add the remaining oil and heat over medium heat.
