How Do You Make a Pumpkin Roll

Pumpkin roll is a delightful dessert that combines the flavors of fall with a delightful twist on the classic Swiss roll. This soft, spiced cake is filled with creamy cream cheese frosting and rolled up into a log shape, making it a visually appealing and delicious treat.   • For the Cream Cheese Frosting:
  • 4 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 cup heavy cream (optional, for a lighter frosting)

Preparing Your Workspace

Before you begin mixing the ingredients, prepare your workspace. You’ll need a clean, flat surface lined with parchment paper. The parchment paper will help you roll the cake without it sticking to the surface. Make sure the parchment paper is large enough to fit the dimensions of your baking sheet, plus some extra for overhang to easily lift the cake out.

Mixing the Cake Batter

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

Prepare Baking Sheet: Grease a 15x10x1-inch jelly-roll pan (or similar size) and line it with parchment paper, letting the parchment paper overhang by a couple of inches on each side. This will help you lift the cake out of the pan easily after baking.

Mix Wet Ingredients: In a large mixing bowl, beat the eggs and granulated sugar together on medium speed until thick and lemon-colored, about 2-3 minutes. Add the pumpkin puree and lemon juice, mixing until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix, as this can make the cake tough.

Pour Batter into Pan: Spread the batter evenly into the prepared pan using a spatula or offset knife. Make sure the batter reaches the corners and is evenly distributed.

Baking the Cake

Bake: Bake the cake in the preheated oven for 12-15 minutes, or until the top is set and a toothpick inserted into the center comes out clean. Be careful not to overbake, as the cake should still be soft and moist.

Rolling the Cake

Powdered Sugar Dusting: While the cake is still warm, sprinkle a generous layer of powdered sugar over the surface. This will help prevent the cake from sticking to the parchment paper and itself as you roll it.

Roll the Cake: Place a clean kitchen towel or a piece of parchment paper on top of the cake. Carefully lift the cake and parchment paper out of the pan using the overhanging edges. Starting at one of the short ends, roll the cake up tightly with the towel or parchment paper, starting with the edge closest to you and rolling away from you. Let the cake cool completely in this rolled-up position, about 1 hour. This will help it set and make it easier to fill and reroll.

Making the Cream Cheese Frosting

Beat Cream Cheese: In a medium mixing bowl, beat the softened cream cheese on medium speed until smooth and creamy.

Add Powdered Sugar and Vanilla: Gradually add the powdered sugar and vanilla extract, beating on low speed until combined. Increase to medium speed and beat until the frosting is smooth and fluffy. If you want a lighter frosting, you can add the heavy cream a tablespoon at a time, beating well after each addition until you reach your desired consistency.

Filling and Rerolling the Cake

Unroll the Cake: Once the cake has cooled completely, carefully unroll it and remove the towel or parchment paper. Spread the cream cheese frosting evenly over the surface of the cake, leaving a small border around the edges to prevent the frosting from squeezing out when you reroll it.

Reroll the Cake: Carefully reroll the cake, this time without the towel or parchment paper. Use a gentle, even pressure to keep the roll tight and prevent cracks. Wrap the rolled cake in plastic wrap and refrigerate for at least 1 hour to set the frosting. This will make slicing and serving easier.

Serving Your Pumpkin Roll

Slice and Serve: Once the pumpkin roll has chilled, use a sharp knife to slice it into 1-inch pieces. Serve chilled or at room temperature, garnished with a dusting of powdered sugar or a dollop of whipped cream if desired.
