How to Make Vegetarian Soup Dumplings

Vegetable soup dumplings are a delightful and hearty dish that combines the warmth of a vegetable soup with the comfort of dumplings. They are perfect for both winter and summer, offering a nutritious and flavorful meal that can be enjoyed by all. Here’s a simple yet detailed guide on how to make vegetable soup dumplings at home.

Ingredients

For the Soup:

  • 3 potatoes
  • 4 tomatoes
  • 2 carrots
  • 1 onion
  • 2 cloves of garlic
  • 1 teaspoon of sugar
  • 2 teaspoons of salt
  • Freshly ground black pepper (to taste)
  • Vegetable broth or water (as needed)
  • 1 tablespoon of olive oil

For the Dumplings:

  • 2 cups of all-purpose flour
  • 1/2 cup of water (approximately)
  • 1 teaspoon of salt

Equipment

  • Large pot
  • Mixing bowls
  • Wooden spoon or silicone spatula
  • Rolling pin
  • Knife
  • Spoon for filling
  • Steamer or large pot with steaming rack

Step-by-Step Guide

Prepare the Soup Base

Vegetable Preparation:

  • Wash and peel the potatoes, carrots, and tomatoes.
  • Chop the potatoes, carrots, and tomatoes into small cubes.
  • Peel and finely chop the onion and garlic.

Cooking the Vegetables:

  • Heat olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic. Sauté until the onion becomes translucent.
  • Add the chopped potatoes, carrots, and tomatoes to the pot. Stir well to combine.
  • Season with salt, sugar, and freshly ground black pepper.
  • Pour in enough vegetable broth or water to cover the vegetables. Bring to a boil, then reduce the heat and let it simmer until the vegetables are tender.

Blending the Soup:

  • Once the vegetables are cooked, use an immersion blender to blend the soup until smooth.
  • Alternatively, you can transfer the soup in batches to a blender and blend until smooth. Be cautious when blending hot liquids.
  • Taste the soup and adjust the seasoning if necessary. Let the soup simmer for a few more minutes to meld the flavors.

Prepare the Dumpling Dough

Mixing the Dough:

  • In a large mixing bowl, combine the flour and salt.
  • Gradually add water, one tablespoon at a time, while mixing with a wooden spoon or your hands until the dough comes together.
  • Knead the dough on a lightly floured surface for about 5-7 minutes until it becomes smooth and elastic.
  • Cover the dough with a damp cloth and let it rest for at least 15 minutes.

Prepare the Dumpling Filling

Cooking the Soup for Filling:

  • Take a portion of the prepared vegetable soup and cook it down further to thicken slightly. You want the filling to be thick enough to hold its shape inside the dumplings.
  • Let the thickened soup cool down slightly.

Assembling the Dumplings

Rolling Out the Dough:

  • Divide the rested dough into smaller portions.
  • Roll each portion into a log, then cut into small pieces (about the size of a walnut).
  • Dust each piece with a little flour and flatten it with your palm.
  • Using a rolling pin, roll out each piece into a thin circle, about 3-4 inches in diameter.

  • Place a spoonful of the thickened soup in the center of each dough circle.
  • Fold the dough circle in half over the filling, creating a half-moon shape.
  • Press the edges together firmly to seal, ensuring no filling leaks out. You can also create decorative pleats if desired.

Cooking the Dumplings:

  • Prepare a steamer by adding water to the bottom and bringing it to a boil.
  • Place the dumplings on the steaming rack, making sure they are not overcrowded.
