How to Make Pork Chinese Style

Cooking pork Chinese style offers a delightful variety of flavors and textures. From tender stir-fries to succulent braises, there are countless ways to enjoy pork in traditional Chinese cuisine. This guide will take you through some of the most popular pork dishes, providing step-by-step instructions and tips to help you perfect them at home.

Preparing the Pork

Before diving into specific recipes, it’s important to know how to prepare pork properly. Always start with fresh, high-quality meat. Here are some general tips:

Choosing the Right Cut: Different cuts are suited for different dishes. For stir-fries, use lean cuts like pork tenderloin or pork loin. For braises, pork shoulder or pork belly are ideal because they have more fat, which keeps the meat moist during long cooking times.

Slicing Techniques: For stir-fries, slice the meat thinly against the grain. This ensures that the meat cooks quickly and evenly. For braises, you can cut the meat into larger chunks.

Marinating: Marinating pork can add flavor and tenderize the meat. Use a mixture of soy sauce, rice vinegar, garlic, ginger, and sometimes a bit of sugar or honey. Marinate for at least 30 minutes, but overnight is best for maximum flavor.

Stir-Fried Pork with Vegetables

One of the simplest and most popular pork dishes is stir-fried pork with vegetables. This dish is quick, healthy, and bursting with flavor.

Ingredients

  • 200 grams pork tenderloin, thinly sliced
  • 1 cup broccoli florets
  • 1 red bell pepper, sliced
  • 1 carrot, sliced into matchsticks
  • 3 cloves garlic, minced
  • 1-inch piece ginger, minced
  • 3 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Cooking oil (vegetable or peanut oil)

Instructions

Marinate the Pork: In a bowl, mix the sliced pork with 1 tablespoon soy sauce, 1/2 tablespoon rice vinegar, and a pinch of salt and pepper. Let it marinate for at least 15 minutes.

Prepare the Sauce: In a small bowl, mix the remaining soy sauce, rice vinegar, and 1 tablespoon water. Add the cornstarch and stir until combined. This will be your thickening sauce.

Cook the Vegetables: Heat 1 tablespoon of cooking oil in a wok or large skillet over high heat. Add the broccoli, bell pepper, and carrot. Stir-fry for about 3-4 minutes until they are tender-crisp. Remove the vegetables from the wok and set them aside.

Cook the Pork: In the same wok, add another tablespoon of cooking oil. Add the minced garlic and ginger and stir-fry for about 30 seconds until fragrant. Add the marinated pork and stir-fry until the meat is browned and cooked through, about 3-4 minutes.

Combine: Return the vegetables to the wok. Pour in the prepared sauce and stir-fry for another 1-2 minutes until the sauce thickens and everything is well combined.

Finish: Drizzle with sesame oil and serve immediately over steamed rice.

Sweet and Sour Pork

Sweet and sour pork is a classic Chinese dish that’s perfect for those who love a tangy, sweet flavor.

Ingredients

  • 300 grams pork shoulder, cubed
  • 1 egg, beaten
  • 2 tablespoons cornstarch
  • Salt and pepper to taste
  • 1/4 cup cooking oil

For the Sauce

  • 1/2 cup ketchup
  • 1/4 cup white vinegar
  • 1/4 cup sugar
  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • 1 small onion, sliced
  • 1 red bell pepper, sliced
  • 2 cloves garlic, minced

Instructions

Prepare the Pork: In a bowl, mix the pork cubes with the beaten egg, cornstarch, salt, and pepper. Let it sit for about 10 minutes.

Fry the Pork: Heat the cooking oil in a deep frying pan or wok over medium-high heat. Fry the pork cubes in batches until they are golden brown and crispy. Remove them from the oil and drain on paper towels.

Make the Sauce: In a separate pan, combine the ketchup, vinegar, sugar, and soy sauce. Stir until the sugar is dissolved. Add the sliced onion, bell pepper, and minced garlic. Cook for about 3 minutes until the vegetables are tender.

Thicken the Sauce: Add the cornstarch-water mixture to the sauce and stir until the sauce thickens.

Combine: Add the fried pork cubes to the sauce and stir gently to coat each piece with the sauce. Cook for another 1-2 minutes until heated through.

Serve: Serve immediately over steamed rice or with fried rice.

Braised Pork Belly

Braised pork belly is a hearty, rich dish that’s perfect for colder weather. The meat becomes incredibly tender and flavorful after hours of slow cooking.

Ingredients

  • 1 kilogram pork belly, cut into large chunks
  • 4 slices ginger
  • 4 cloves garlic, crushed
  • 3 star anise
  • 2 cinnamon sticks
  • 1/4 cup soy sauce
  • 1/4 cup rice wine (Shaoxing wine)
  • 1/4 cup brown sugar
  • 4 cups water
  • Salt to taste
  • Green onions for garnish

Instructions

Prepare the Pork: Blanch the pork belly in boiling water for about 5 minutes to remove impurities. Drain and rinse with cold water.

Cook the Aromatics: In a large, heavy-bottomed pot, heat a bit of oil over medium heat. Add the ginger, garlic, star anise, and cinnamon sticks. Stir-fry for about 1 minute until fragrant.

Braise the Pork: Add the blanched pork belly to the pot. Pour in the soy sauce, rice wine, brown sugar, and water. Add salt to taste. Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 2-3 hours, or until the pork is very tender.

Serve: Once the pork is tender, remove it from the pot and let it cool slightly. Slice into thick pieces and serve with the braising liquid poured over top. Garnish with chopped green onions.
